Curry leaves also known as Kadi Patta are the leaves of Curry tree. It is found in tropical and subtropical region of India. And is cultivated various other countries including China, Australia and Nigeria.

Curry leaves are highly sought after for their unique flavors and usefulness in cooking, but there are also a number of health benefits that makes them highly appealing.

There are hundreds of recipes where Curry leaves are use to enhance the taste and flavour.

Today I  are going to share a very simple and popular recipe using curry leaves. This is an appetizer and known as Chicken Curry leaves fry.

How to make chicken curry leaves fry Recipe

Ingredients :- 

* 1 Chicken breast.

* 7-8 Curry leaves.

* 1/2 teaspoon Red Chilly Paste.

* 1/2 teaspoon Ginger Garlic paste.

* 1/2 teaspoon red chilli powder.

* 1 teaspoon Gram flour ( Chickpea flour also known as Besan).

* 1/2 teaspoon Corn starch (flour).

* 1 teaspoon beaten egg.

* 1/2 teaspoon Lemon juice.

* Salt as per taste.

* Cooking oil for deep frying.

Step by step instructions to make chicken curry leaves fry Recipe

Method of preparation :-

* Take the chicken breast and cut into thin finger size  slices. Add salt, lemon juice and chilli powder .

* Wash the curry leaves and deep fry them them till crisp. Let it cool down.

* Make a powder or mashed the fried curry leaves using your hands.

* Better to use the mashed curry leaves as it gives a nice visible looks.

* Take a mixing bowl, add red chilly paste, ginger garlic paste, gram flour, corn starch and salt and mix very well. Add the beaten egg into the mixture.

* Note that the gram flour don't form any lumps in the mixture. If there is any, then mix  very well till the lumps are vanished.

* Add the mashed curry leaves and  remaining lemon juice into the mixture.

* Now add the chicken pieces into the mixture and mix well. Let it marinate for 15 minutes to a absorb all the flavors.

* Heat oil in a deep skillet pan and deep fry the chicken fingers till crisp golden in slow flame.

* Garnish and serve hot. Your chicken curry leaves fry is ready. Enjoy the distinct flavor and aroma of curry leaves in the crisp chicken pieces.
