Chicken parmesan and chicken parmigiana both are same is consist of breaded chicken breast covered with tomato sauce, mozzarella, parmesan cheese.

There are some variations to chicken parmesan depending on layering topping with ham or bacon and changing cheese from mozzarella to cheddar.

In United States it is known as parm and in Australia as Parma, parmi or parmy.

Chicken parmesan is a dish from Italy and originated in the region around Parma, Italy. Initially it was eggplant parmesan where eggplant slice are breaded and fried and layered with sauce and parmesan cheese.

I have made these chicken parmesan recipe in two ways. One is without bread crumbs coating and another one with bread crumbs.  Which one suites you better can be tried. Both taste really great.

For healthy version i have stuffed scrambled eggs inside the chicken breasts and grilled them on a pan to give it a nice colour. Then baked it in oven till done.

With the same stuffed breasts I have coated with bread crumbs and fried till crisp then baked in oven till done.

I have used the homemade tomato sauce for the recipe,you can use your favorite Marinara.

The tricky part is to cut the chicken breast from inside to make a pocket for the stuffing or filling.

 How to cut or split chicken breast for stuffing or filling....

For stuffing fillings into a chicken breast you need to cut a pocket inside the breast. The pocket should be deep and wide enough to hold the fillings inside. Larger  breasts make it easier .

Creat a small split on the thickest part of the breast. And place the chicken on a cutting board.a
Press a hand on top of the breast and carefully insert the tip of the knife into the breast.

Cut an opening through the breast. Then cut through the way about 3/4 of the breast to create a pocket without cutting of the way through. Repeat same with the remaining chicken pieces.

Marinating the chicken breasts


Mix salt , pepper, fresh thyme, lemon juice and mince garlic. Add 1/2 teaspoon olive oil and keep refrigerated for 10 - 15 minutes.

We are going to fill the chicken breasts with scrambled eggs. These chicken parmesan with scrambled eggs is full of nutrient and healthy.

Heat olive oil or butter in a non stick pan and add  4 beaten eggs. Stir and mix the eggs with a wooden spatula.

Pour milk and mix well . Stir continuously to cook . Add salt and pepper. Switch off the flame and remove.

Breaded Chicken parmesan recipe

Mix bread crumbs with 2 teaspoon grated parmesan cheese and garlic powder or paste. Dust the chicken breasts with all purpose flour.

Dip the scrambled eggs filled chicken breasts into beaten egg  and then coat with the bread crumbs. Rest for 5 minutes then shallow fry with olive oil till crisp golden on both sides.

Remove and top with tomato sauce. Sprinkle shredded mozzarella cheese,l grated Parmesan and Gouda cheese.  You can apply parsley or basil leaves also.

Bake in a preheated Oven for 10 - 12 minutes or till when the cheese melted and bubbling and the chicken are cooked completely.

Ingredients

For making scrambled eggs

• 4 eggs
• 1/4 milk
• 1/2 teaspoon black pepper powder
• 1/2 teaspoon salt
• 2 teaspoon butter

For marinating chicken

• 2 boneless chicken breasts
•  fresh thyme little bit
• 1/2 teaspoon lemon juice
• 1 teaspoon olive oil

For breading the chicken

• 1/2 cup bread crumbs
• 1 beaten egg
• 3 teaspoon all purpose flour
• 1 teaspoon grated Parmesan cheese

For homemade tomato sauce

• 1 chopped onion
• 2 teaspoon chopped garlic
• 300 gm tomato puree
• 1 teaspoon olive oil
• 1 teaspoon oregano
• 1 teaspoon salt
• 1 teaspoon pepper
• 1 teaspoon sugar (optional)

For topping

• 150 gm shredded mozzarella cheese
• 1/3 cup grated Parmesan cheese
• 1/4 cup grated Gouda cheese(optional)
• 1 teaspoon chopped parsley

Instructions
  • Cut the chicken breasts from inside to create pocket for fillings as described above. Apply salt, pepper, garlic, thyme and half of the olive oil. Let it marinate for 10 minutes.
  • Take a pan and heat 1 teaspoon olive oil and fry the chopped onions till transparent for about 3 minutes then add the garlic. Saute for 30 seconds or fragrant.Add the tomato puree, salt, pepper, oregano and sugar and let it simmer for 6-8 minutes in medium flames. When the sauce thicken slightly remove and let cool down.

  • Make scrambled eggs in a pan and cool down as shown above.
  • Now take the marinated chicken breast and stuffed the scrambled eggs inside it through the opening cut ( hole). Repeat with the remaining breast piece.

  • Heat 1/2 teaspoon oil in a non stick pan and grill the chicken breasts both sides till you get a nice roast colour about 2 minutes both sides.

  • Remove the chicken pieces on a baking tray and top each breast with 2-3 teaspoon  prepared sauce. Top again with shredded mozzarella cheese, 2 teaspoon grated Parmesan cheese and 1 teaspoon Gouda cheese. You can sprinkle some chopped basil leaves or parsley.

  • Baked them for 10 minutes or until the cheese are melted and bubbling and the chicken pieces are cooked completely.
Remove them and slice into 3- 4 pieces and serve.
