In this corn spinach burger recipe you need corn( preferably American or Mexican) and spinach (palak) leaves.
First boil the corn till fully done on medium flame heat. Similarly blanched the spinach leaving the hard stems. Drain them and remove any excess water from them 
Roughly chopped them and saute with olive oil, garlic and spices. For binding agent you can either use boiled mashed potato or grated paneer.
In this recipe, I have used Paneer ( cottage cheese) as it is more nutritious and beneficial for growing kids or children.
You can include paneer to your growing kids and children's  diet by giving them a healthy paratha....
A good burger sauce is very important for a classic burger recipe. It is the sauce that makes your burger  taste great. 
Burger sauce is a flavoured mayo sauce with some extra ingredients. These flavoured mayo sauce is  known as Aioli.
 My favorite one is easy to whip up and most of the ingredients are easily available in your kitchen or pantry. In a mixing bowl , mix  together all the ingredients and whisk to make the burger sauce. 
• You can make following two types of burger sauce at your home.
  • BBQ Aioli ( 1/3 cup  mayo + 1 tbs BBQ)
  • Mustard Aioli ( 1/3 cup mayo + 1 tbs  French mustard)
• You can covered and refrigerated these sauce  for one week to use.

 Ingredients

  •  A sesame seed Bun
  •  Lettuce leafs chopped
  •  Onion slice
  •  Tomato slice
  •  Salt
  •  1/2 cup boiled American corn.
  •  1 cup blanched spinach
  •  1/2 cup cottage cheese ( paneer) or
  •  1 boiled potato
  •   Fresh parsley or cilantro leafs
  •  1/2 teaspoon ground cumin
  •  1 teaspoon red chilly flakes or
  •  1/2 teaspoon green chilly chopped
  •  2 teaspoon Olive oil.
  •  Salt as per taste.
  •  2 teaspoon corn starch.
  •  1/2 teaspoon all purpose flour
  •  4 teaspoon fine quality bread crumbs or
  •  4 teaspoon corn flakes
For burger sauce
  •  1/2 cup mayonnaise
  •  1/4 cup tomato ketchup
  •  2 teaspoon sweet pickle relish
  •  2 teaspoon White vinegar
  •  1 teaspoon ground black pepper
How to make the recipe
  1. Roughly chopped the corn and the  spinach. Squeeze out any excess water from  the spinach.
  2. Heat olive oil in a pan and saute chopped garlic till light brown. Add the corn and spinach and fry till they become dry.
  3. Add chilly flakes, parsley, salt and  cumin powder. Mix well with them and remove.
  4. When cool down, add corn flour  all purpose flour, bread crumbs and grated potato or paneer with them.
  5. Mixx them nicely to make a dough.
  6. Divide the dough into equal parts and  make round shaped Patty.
Making batter for burger
  1. Take a mixing bowl and add the  remaining corn flour and all purpose flour. Pour 2 - 3 teaspoon water and mix nicely to make a thick batter without any lumbs.
Grilling the burger Patty
  1. Dip the prepared Patty in the batter, remove and  coat with the bread crumbs nicely so that  all sides are coated well with the bread crumbs.
  2.  Press the coated Patty between the palms of hands and lightly press to set.
  3. Heat olive oil in a non stick pan or tawa and grill  the Patty on both sides till  crisp golden.
  4. You can even bake them in a oven at 180° C for 20 minutes on both sides.
   Making the sauce for burger
  1. In a mixing bowl whisk together all the ingredients for burger sauce to make the  sauce.

  1. Slice the sesame bun into two equal parts and apply butter. Toast them to crisp golden. You can even apply cheese on one half of the bun.
  2. Now apply the prepared sauce on the inner side of the toasted bun. 
  3. Placethe burger Patty over the lowerhalf of the bun. Apply some sauce over the patty.
  4. Place the onion and tomato slice overthe patty. Topped them with chopped or shredded lettuce leaves.
  5.  Place the second half toasted bun overthe lettuce and press slightly to set everything.
  6. Take a toothpick and thread from the top with a olive to set the burger.
  7. Serve it with french fries or potato wedges.

                           Serving tips
  • You can serve these delicious and healthy burger with french fries or potato wedges. Also serve classic burger sauce or mustard Aioli sauce with your favorite veg burger. A Coleslaw mixture is also served along with the veg burger. Tomato ketchup can also be served with a veg burger.
                          RECIPE NOTE
  •  Using any types of binding agent is important for the burger patty. Only bread crumbs will not help to bind the patty. It only absorb the excess moisture. So the burger patty may break down while grilling if binding agent like corn starch and all purpose flour is not used.
  • you can saute the mix vegetables to dry and apply the seasoning to further saute them .
  • cheese slice can be used inside the bun with vegetables. You can apply burger sauce over the patty to give it a extra flavour.

  •  Cottage cheese also known as Paneer is a rich source of protein and dietary fiber. So it is best to use instead of potato in burger recipe

1. Roughly chopped the corn and  spinach . Make sure to squeeze extra water from the spinach.
2. If using potato then mashed it in a mixing bowl or cottage cheese then grate it .
 Here I am using the cottage cheese as it is a great source of protein and has a good dietary fiber.
3. Mix the chopped corn and spinach with the cottage cheese and add ground cumin, red chilly flakes, parsley and salt. Mix well .
4. Add the corn starch and all purpose flour and mix to form a smooth dough like mixture. If required add bread crumb powder to make it smooth.

5. You can seasoning the corn spinach with little olive oil in a pan . Add chopped garlic and saute for while then add the corn and spinach and saute for two minutes till the mixture get dry.

6. Add salt , chilly, cumin and parsley and mix well. Switch off the flame and let the mixture cool down.
7. Now add the grated cottage cheese, corn starch and all purpose flour and mix well to a smooth mixture.
8. Make a circle Patty with the mixture and keep aside.

Batter making for burger Patty

• Take a mixing bowl and add the remaining corn starch and all purpose flour. Slowly add two to three teaspoon water to make a thick batter. Don't make a watery batter. You can add more Corn starch if the batter become diluted.

• You can make another batter by  mixing gram flour and rice flour together with little water.  Maze flour  can also used to make a batter with gram flour .

     Grilling the burger Patty
1. Dip the prepared Patty into this batter and dust with the bread crumbs. Make sure all part of the patty is dusted with the crumbs. Press the patty between your palm to set .

2. Take a non stick pan and heat olive oil in slow flame. Grill the patty in both side till crisp golden.

4. Remove in a tissue paper to absorb excess oil.You can baked or grilled the patty in oven also .
You can grilled these burger patty in a Preheated oven at 180 degree celcius for 20 minutes on each side.
Prepare a baking tray by lining an aluminum foil over it . Now place a wire rack and grease it with oil . Place the prepared burger patties over it and grilled them flipping both sides .
  MAKING THE  BURGER    
1. Slice the sesame seed bun into two equal halves and toast till crisp brown. You can spread some butter on the bun and toast.

In restaurant , sometimes cheese is spread on one half of the bun .

2. Now take the lower half of the bun and spread the prepared burger sauce over the toasted side.
3. Place the  Patty over it and  topped it with onion and tomato slices. Again place  the shredded or chopped lettuce leafs over the onion tomato slice.

4. Take the second half sesame seed  bun and spread the sauce over the toasted side. If you have applied cheese then avoid spreading the sauce.
5. Now  cover the first half bun with the second sesame seed bun.  Take a toothpick and olive and thread from top of the bun to set the burger.

6. Serve the yummy burger with some french fries or potato wedges.
