Scotch Egg is a  very popular dish through out the world. Scotch egg recipe is prepared by coating a soft or hard boiled eggs with sausage meat and coated with bread crumbs. It is then either deep fried or baked.
What is the origin of scotch egg?
Though there are many theories available about the origin of scotch egg , here few to mention below.
  • The recipe for traditional scotch egg is deeply rooted in the coastal town of Whitby in Yorkshire.It is believed to be invented by the establishment William J Scott & Sons, the eggs were originally covered first in a thick, creamy fish paste (instead of the sausage meat), and then with breadcrumbs. The fish was later replaced by sausage meat once the the concept of Scotch eggs became more commercialized and became available in big food shops. You can still treat yourself to the original delicacy of the fish-covered Scotch eggs on the East Yorkshire coast. 
  • Another origin story also argues that the scotch eggs are heavily inspired by a Mughal dish called Nargisi Kofta where eggs are wrapped in Lamb mince, fried and covered with spiced yogurt brown gravy. This recipe was discovered by British soldiers during their time in India.
  • In 1738,  Fortnum & Mason - a London departmental store came up with a new delicacy for its most affluent customers: a hard-boiled egg wrapped in sausage meat, coated with bread crumbs and deep-fried. The scotch eggs appeared on the menu for the first time. 
  • Some evidence also suggested that it is a  North African recipe that were transported to England through France. This dish was also enjoyed during the Elizabethan time.
Whatever the origin for it , we have a wonderful dish with us to enjoy.  Scotch eggs recipe is very easy and simple, you can make it at your home with less ingredients to surprise your family members.

Scotch eggs are made by coating a soft or hard boiled eggs with sausage meat and dusting with bread crumbs. These are then deep fried till crisp golden. You can make a healthy scotch eggs by using minced chicken and bake in oven or over BBQ

Ingredients 
For traditional scotch eggs
  •  6 - 7 large free range Eggs
  •  2-3 fine quality sausages
  •  1/2 teaspoon English mustard
  •  1/2 teaspoon fresh chopped parsley 
  •  1/3 teaspoon nutmeg powder
  •  Pinch of rock salt
  •  Black pepper powder as required 
  •  1/2 cup fine quality bread crumbs
  •  All purpose flour for dusting
  •  Cooking oil for deep frying
For bbq bbq Scotch eggs
  • 4 eggs
  • 50 g chicken minced
  • 1/3 teaspoon red chilly flakes
  • 1/4 teaspoon black pepper powder
  • 1/2 teaspoon chopped parsley
  • 1/2 teaspoon chopped garlic
  • 1/2 teaspoon lemon juice
  • Salt as per taste
  • Butter cubes for busting
How to make the recipe
  1. Boil 4 - 5 eggs. For soft boil eggs boil for 4 minutes and for hard boil eggs 7 - 8 minutes.
  2. Once cooled down, peel them carefully.
  3. In a mixing bowl squeeze the sausage out of their skins and mix with mustard paste, black pepper powder, salt, nutmeg powder and parsley.
  4. Give everything a good mix and divide into equal size small balls.
  5. Beat the remaining eggs and arrange two plates one with  bread crumbs and another with flour.
Making the scotch eggs
  1. Take one sausage mixture ball in the palm of one hand and flatten into oval shaped patty.
  2. Roll one boil egg in flour and pop it in the middle of the Patty.
  3. Slowly shape the meat around the egg evenly, moulding it with hand untill sealed.
  4. Now roll the meat wrapped egg in the flour and shake off excess and dip into the beaten eggs.
  5. Dust it in the bread crumbs properly and press lightly so that it coated evenly.
  6. Repeat with the remaining eggs and then heat oil in a pan in medium flame heat.
  7. Carefully add them into the oil and cook for  4 - 5 minutes in slow flame. 
  8. When the eggs become crisp golden remove them in a kitchen paper.
  9. Cool slightly and cut into pieces and serve.
Making heathy scotch eggs
  1. Take the minced chicken in a mixing bowl and add the chilly flakes, black pepper powder, chopped garlic, salt, lemon juice and parsley.
  2. Give a fine mix and keep aside to marinate for 10 - 15 minutes. 
  3. Now divide chicken mince into equal size small balls.
  4. Take one chicken ball in the palm of one hand and flatten into an oval shape patty.
  5. Place one boil egg in the middle and cover it with the chicken mince evenly and sealed.
  6. Similarly wrapped the remaining boiled eggs.with the chicken minced.
Cooking the healthy scotch eggs
  1. Preheat oven to 240°C for 15 minutes and cover a baking tray with aluminum foil and place the wrapped eggs on it.
  2. Grease butter on then and bake for 15 to 20 minutes or till crisp golden.
  3. Similarly you can BBQ them by threading them in a shewer and cook over the charcoal fire for 7 to 8 minutes or till crisp golden.
  4. Apply butter while cooking them over charcoal at regular interval.
  5. Remove them and cut into half. Serve them immediately.

                        Serving tips
• You can serve scotch eggs with green salad ie slice of tomato, onion and cucumber.  Some pickle along the salad with scotch eggs can also be served.
• Scotch Cheddar cheese slice can be served with it. Cocktail sauce is also a good side sauce that can also be served with a scotch egg.
                     Recipe notes
• You can keep cooked scotch eggs in refrigerator up to 7 days. Uncooked scotch eggs can be keep for 3 days in fridge.
They can be frozen up to 2 month in deep freezer.
• Scotch egg can be served or taken either cold or hot . It is very popular as a picnic food because they travel well. So you can take it in room temperature or even cold.
• In many pubs and restaurants scotch eggs are served with a runny yolk

Step by step methods for scotch eggs recipe with photos for better understanding....

1. Put 4 -5 eggs in pan of cold water and bring it to boil . If you want soft boil eggs then boil for 4 minutes. For hard boil eggs , boil them for 7 -8 minutes.
Transfer the eggs in a pan of cold water . Once cooled, peel them carefully. You can even pressure cook the eggs. Make one whistle in high flame . 
2. In a mixing bowl squeeze the sausages out of their skins and mix with chopped parsley, black pepper powder, salt and mustard paste. Give it all a good mix together and divide in equal size balls.
3. Now beat the remaining eggs in a bowl. Arrange  two plates ready , one with bread crumbs and another with flour.

8. Repeat with the remaining eggs. Heat oil in deep frying pan in medium flame. When the oil become hot lower the flame to slow.

9. Now carefully lower the eggs into the pan and cook for 4 - 5 minutes in slow flame. Turn the eggs every so often while frying.
10. When the eggs become crisp golden, remove them in kitchen paper. Cool slightly then cut and serve the scotch eggs in a serving plate with garnish.

There is very little or no oil is use when cooking over an Ovalclay Tandoor. It is a slow cooking method and the product is cooked on its own juice. And of course you get a smoky flavours.
Minced chicken for Scotch Egg  recipe
1. First  we need to boil the eggs . As we are going to cook it over charcoal using a Shewer, we need to boil the eggs a bit harder. So it can easily hold on the Shewer.
2. Boil the eggs by above mentioned method.
3. Take a mixing bowl and add the mined chicken. You can use a ready made store brought minced or can make it at your home.
4. Best to use is the homemade minced chicken. Using a mixer grinder,you can make minced chicken easily.
5. Take 3 - 4 chicken breasts and roughly cut them into small pieces.  Grind them in a mixer grinder into a smooth mince. If you have a meat mincer then it is quite easy to make a mince.
6. Add all the ingredients except the butter into the minced chicken and knead like a dough until everything mixed well.

7. Leave the mixture for few minutes to marinate and absorb all the flavors.
8. Peel the eggs and wash properly.
9. Now divide the chicken mixture into 4 equal size portion to coat the eggs.
 Before coating the eggs, you should  apply little oil or butter on your palms . You can use water instead of oil also. The minced chicken won't get stick to the palm in wet hand.
10. Spread the mixture on your  palm and keep the boiled egg in middle and cover it from all sides to sealed.

11. Now take a Shewer and shew the mined coated eggs slowly through the middle of the eggs. You can shew one egg in one Shewer or two.

12. Now put the Shewer in a preheated Ovalclay tandoor and cook for 7-8 minutes busting clarified butter over the coated eggs.

 When it get tender and brown in colour, remove from the Shewer and cut into two pieces using a sharp knife.
 Your  Scotch Egg is ready to serve now.  Arrange them in a plate and garnish with chopped parsley and serve.
 You can further give it a new innovative touch.  Some people don't like to eat the egg yolk. As it has  high cholesterol levels.
You can remove the yolk and fill it with your choice of Stuffings.
 I have filled them with some chopped onion and tomato seasoning with salt and chilli powder.
