Lamb Gilafi seekh Kebab also known as Mutton Gilafi Seekh Kebab is a Mughlai delicacy prepared with minced Lamb and a blend of spices. It is a delicious and mildly spicy dish which has incredible taste and flavours. These succulent Kebabs are ideal appetizer for some especial occasions like birthday party, cocktail dinner party and corporate get together.

These Lamb kebabs are served with Green chutney or Mint sauce or with tomato ketchup.

Lamb Gilafi Seekh Kebab is a very popular dish in Indian subcontinent. Gilafi means Cover. These Seekh Kebab are gilaf or covered by chopped Bell pepper and capsicum and then cooked in  an Ovalclay Tandoor or BBQ or in Oven.

Lamb Gilafi Seekh Kebab with Naan

Finely minced lamb meats are marinated with spices and placed in a shewer cylindrically and then covered or gilaf with chopped bell peppers and cooked in tandoor or BBQ till crisp and juicy.

Preparation time :- 15 minutes

Cooking time :- 10 minutes

Total time :- 25 minutes

Serve :- 2 servings

Ingredients :-

   • 200 gm Lamb meat

   • 10-12  Clove of Garlic

   • 2-3 pieces of Ginger

   • Small bunch of Corriander leaves

   • Small bunch of Mint leafs

   • 1/2 Green Capsicum

   • 1/2 Red and Yellow Bell pepper

   • 1/2 teaspoon cumin powder

   • 1/3 teaspoon garam masala

   • 1/2 teaspoon red chilli powder

   • 1/4 teaspoon black pepper powder

   • 1/2 teaspoon lemon juice

   •  Salt as per taste

   • 3 teaspoon of clarified butter or ghee

How to make the recipe

Preparation

   1. Making the Gilafi, chopped the
       capsicum and red, yellow bell pepper
       and keep in fridge to use to gilaf(cover)
       the Seekh Kebab.

   2. Roughly chopped the cilantro and mint
       leaves.

   3. Cut Lamb pieces in small size and pat
       dry completely using a kitchen towel.

   4. In a mixing bowl take the lamb pieces
      and mix with ginger, garlic, red chilli
      powder, garam masala, cumin powder,
      lemon juice, black pepper powder and
      salt.

   5. Add the chopped mint and coriander
       leaves as well and mix everything well.

   6. Now using a meat mincer make a
       keema ( mince) .

   7. For a soft and juicy kebab, make two
       round of mincing with the meat.

   8. Take the minced meat in a flat mixing
       plate and rub with the palm so that all
       the spices mix properly.

   9. Pour 1 - 2 teaspoon ghee and lemon
       juice and rub again.

  10. Keep the minced mixer refrigerated to
        marinate for 3 - 4 hours or overnight.

  11. After the marination time, divide the
       mince into equal parts.

  12. Take a iron shewer and shew a mince
        ball by lengthwise of the shewer using
        a wet palm of a hand.

  13. Now gilaf the Seekh Kebab by placing
        the chopped bell peppers over the
        minced shewer to cover them totally.

  14. Repeat with the remaining mince ball
        and place them in a baking tray.

  15. Bake them in a Preheated oven for 10
        minutes busting some oil or butter over
        them after an interval.

  16. If using a clay tandoor then place them
        inside a preheated tandoor and cook.

  17. After 5 minutes remove them from
        the tandoor and brush some butter.
        And place again inside the tandoor and
        cook for more five minutes till done.

  18. Remove them from shewer and cut
        into pieces and serve.

               Serving tips

   • Serve Lamb Gilafi Seekh Kebab with
     cilantro mint chutney, onion slice and
     lemon slice.

   • Tandoori naan bread or rumali roti are
      also can be served with them.

               Recipe notes

   • To make them more soft and juicy mix
      lamb fats with the meat while mincing.

   • While cooking them in tandoor use
     kitchen towel to handle the shewer.

* Important point

To make the kebab more juicy and soft  you need to add some extra fats . These fats make it more tasty and juicy.

* 50 gm Fats preferably Lamb fats
You can escape this ingredients if you wish.


How to make Gilafi lamb Seekh Kebab 

Method of preparation :-

1.  Clean and wash the Lamb meat and cut it into small size pieces. Pat dry the meat and keep aside.

2. Chopped the Mint and Cilantro leafs

3. Finely chopped the Capsicum and Red Yellow Bell pepper. Keep it aside in a bowl.

4. Take a bowl and mix all the ingredients with the Lamb meat and mix well.

5. Add the chopped cilantro and mint leafs to the above mixture.

6. Now make a  minced of the lamb mixture using a Meat Mincer.

7. Make the mixture minced for two rounds in the meat mincer. This will make it more soft.

8. Make equal size ball of the mixture and Shewer it in a iron shewer length wise using wet hands. By wet hands the minced mixture won't get stuck to hands.

10. Cook it in an Ovalclay Tandoor for 7-8 minutes busting some butter or ghee on it.

11. You can cook it in a BBQ or  oven too.

12.  Serve it hot with your choice of Sauces , the green chutney or tomato sauce.
