What is paneer masala

Paneer masala is a dish of paneer curry which is little bit spicy and having aromatic flavour due to the use of different spices.

Paneer masala is light brown in colour and little bit spicy in taste. Amount of onion ratio is more than tomato.

Paneer is a milk product known as cottage cheese made by curdling milk with lemon juice or cooking vinegar.

Once the milk is curdled , collect the cheese or chenna  in a muslin cloth. Wash under cold water, remove excess water and then let it set firm in refrigerator. This is how you can easily make paneer at home.

Paneer masala is different from paneer butter masala in taste and appearance.

Paneer butter masala is little bit sweet in taste and orange in colour. Where as paneer masala is little bit spicy and light brown in colour.

More amount of butter and cream is used in paneer butter masala wherein less or no amount of butter is used in masala paneer.

Paneer masala is spicy paneer curry or gravy recipe with masala. It is not sweet like paneer makhani or paneer butter masala. Paneer cubes are simmered in a spicy aromatic tomato onion gravy to perfection.

Ingredients 

For gravy

• 1 big size onion sliced

• 1 medium size tomato sliced

• 1/2 teaspoon ginger garlic paste

• 1/3 teaspoon red chilli powder

• 1/4 teaspoon turmeric powder

• 1 bay leaf (Tez patta)

• 2 green cardamom ( elaichi)

• 1/2 inch cinnamon stick(dalcini)

For masala

• 200 gm soft paneer cut into cubes

• 1 medium onion chopped

• 3 - 4  chopped garlic

• Small pinch of cumin(jeera) seeds

• 1/2 teaspoon coriander powder ( dhaniya)

• 1/4 teaspoon turmeric powder

• 1/3 teaspoon red chilli powder

• 1 - 2 green chili slits( optional)

• 2 teaspoon chopped Cilantro

• 2 teaspoon fresh cream or milk

How to make the recipe

1. Heat one teaspoon oil in a pan on medium flame and saute the ginger garlic paste till raw smell disappear.

2. Add the cardamom, bay leaf and cinnamon stick and saute for 30 seconds.

3. Add the sliced onions and fry till light brown.

4. Then add 1/3 teaspoon red chilli powder, 1/4 turmeric powder and saute for a second.

5. Add the sliced tomatoes and cook till they become soft and messy.

6. Remove and cool down them completely.

7. Grind them into a fine paste using little water as required.

Making paneer masala

1. Heat 1/2 teaspoon oil in a pan and fry the paneer cubes till golden and crisp from all sides. Remove and keep aside to use later.

2. Again heat 1 teaspoon oil in the same pan and saute the chopped garlic and cumin seeds till light brown.

3. Add the chopped onions and fry till translucent.

4. Mix red chilli powder, corriander powder, turmeric powder and slits green chili and saute for 30 seconds.

5. Pour the tomato onion paste and cook for 2 to 3 minutes.

6. Add the fried paneer cubes and coriander leaves and cook further 1 minute.

7. Pour the fresh cream and mix well. Add salt as per taste into the gravy masala.

8. Check the thickness of the gravy and seasoning. If required pour little water to increase the gravy masala.

9. Sprinkle some chopped coriander leaves and remove the paneer masala.

10. Serve hot with roti , naan or steam rice.

             Serving tips

• paneer masala is best to served with Indian flat Breads like tandoori roti, butter naan and Lachcha Paratha.

• Homemade chapati and phulka with ghee is considered as the best combination with any paneer curries or paneer sabji.

• You can also served steam basmati rice or jeera rice with paneer Masala.

             Recipe notes

• paneer masala usually a little spicy paneer dish compare to paneer makhani and paneer butter masala. You can increase or decrease the amount of Chilli according to your taste.

• I have used the fried paneer in the gravy. You can use paneer without frying.

• In place of cream , milk can be used in this paneer masala recipe . Cream balanced the spices and enhanced the taste.

1. Heat 1 teaspoon oil in a pan and  fry the ginger garlic paste till raw smell goes off. Add the cardamom, bay leaf and cinnamon stick and saute for 30 seconds.

2. Now add the sliced onions and fry till light brown. Then add 1/3 teaspoon red chilli powder and 1/4 teaspoon turmeric powder and saute for few seconds.

3. Again add the sliced tomatoes and fry till soft and mashy.

 Remove and cool down. Discard the whole spices.

4. Now grind the onion tomato mixture into a fine puree or paste adding little water in a grinder or mixer.

Making the paneer masala 

1. Heat 1/2 teaspoon oil in a non stick pan and fry the paneer cubes in all sides till golden. Remove to use later in  gravy.

2. In that same pan, heat 1 teaspoon cooking oil and saute the chopped garlic and cumin seeds. Then fry the chopped onions till light brown.

3. Thereafter add the red chilli powder, coriander powder, turmeric powder and slits green chili and saute for 30 seconds. Pour little water and cook for a while.

4. Now pour the tomato onion puree and cook further 2-3 minutes.

5. Pour the fried paneer cubes and half of the Cilantro leafs into the masala gravy and mix well and cook further for 1 minute.

6. Now pour 2 teaspoon fresh cream or milk and mix well. Add salt as per taste. Sprinkle few chopped cilantro leave and remove and serve paneer masala.
