Tips to choose right bhindi

A good quality bhindi can make your dish more enjoyable and you don't want those slimy stuff anywhere on your plate. So here are some tips you can keep in your mind while buying bhindi.

  • The smaller the pods, the better the bhindi. They are sometimes called as Lady's finger so look for pods the size that almost your index finger. The younger the pod the less the slime.
  • Next look for the color. Look for bright green pods with no blackened age spots. The brighter the pod, the fresher is.

Ingredients required to make it

Bhindi :  good quality bhindi can give you the best result. So choose young and tender bhindi to make the recipe.

Onion and tomato : one medium size each finely chopped.

Green chili : two either finely chopped or slits. Or you can even use chilli paste.

Spice powder : coriander powder, turmeric powder, garam masala powder and cumin seeds.

Ginger garlic : It is optional, you can either use paste or chopped. I haven't use them here.

Others : cooking oil, salt and fresh chopped coriander leaves.

What to serve with it

The best way to serve this sabji is with homemade roti or phulka. Tandoori roti and butter naan also work fine with this bhindi fry.

You can even serve it as a side with with dal and rice.

Time taken to make it

The total time taken to make this recipe is under twenty minutes. Which includes ten minutes of preparation time and ten minutes of cooking time.

Steps to make the recipe

1. Cutting the vegetables

Wash the bhindi under running water and wipe them dry completely. Cut off the heads and tails and chopped them as finely as possible.

Similarly chopped a medium size onion, one medium size tomato and two green chili.

Chopped some fresh coriander leaves as well.

2. Shallow frying

Heat a pan or kadai with one tablespoon cooking oil over medium heat flame fire. When the oil become hot lower the gas flame to low and add the finely chopped bhindi.

Fry them for three to four minutes under medium heat flame by stirring constantly.

Fry them till there is no slimy substance present in the bhindi. Remove them in a bowl to use later while making the sabji.

3. Making the sabji

Now heat one tablespoon cooking oil in the same pan over medium heat flame and add some cumin seeds. Fry till the cumin cracks. Then add the chopped onions. Fry the onions till become light brown.

Then add the shallow fried bhindi and mix well with the onions

Add turmeric powder, coriander powder, garam masala powder, salt and chopped green chillies.

Mix everything nicely and cook for a minute then add the chopped tomatoes.

Mix and further cook for two minutes or till the tomatoes become soft but not mushy.

Taste the seasoning and if required add some more salt and masala powder. Sprinkle some chopped coriander leaves and remove the bhindi fry to serve hot with roti and naan.

Ingredients

  • 200 gm tender and young bhindi
  • 1 medium size onion finely chopped
  • 1 medium size tomato finely chopped
  • 2 green chili chopped
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon ginger garlic paste
  • Chopped coriander leaves
  • Salt as per taste
  • Oil for cooking
Instructions
  1. Wash the bhindi nicely under running water and wipe dry completely. 
  2. Now cut  off the tips and heads of them and chopped finely.
  3. Similarly chopped onion, tomato and green chili.
  4. Heat one tablespoon cooking oil in a pan over medium high heat flame and when the oil become hot lower the gas flame to low and add the chopped bhindi.
  5. Fry them till there is no slimy substance present in the bhindi. It will take around 4 to 5 minutes. Otherwise you can even deep fry them also.
  6. Remove the bhindi in a bowl to use later  while making the sabji.
  7. Now heat one tablespoon cooking oil in the same pan over medium heat and add cumin seeds.
  8. Fry the cumin seeds till cracks then add the chopped onions. Fry them till become light brown. At this stage you can add some ginger garlic paste as well.
  9. Now add the shallow fried bhindi and mix well. 
  10. Add turmeric powder, coriander powder, garam masala powder, salt and chopped green chillies. Mix them nicely and cook for one minute.
  11. There after add the chopped tomatoes and mix well with the bhindi. Cook further for one more minute or till the tomatoes become soft.
  12. Taste the seasoning and if required add some more salt and chilli. Sprinkle some chopped coriander leaves and remove the bhindi to serve hot with roti.
