What is triple rice ?
Triple rice is a one pot meal with a combination of fried rice, noodles and schezwan gravy. A popular Mumbai street food also known as combination rice or packed rice. Rice and noodles are stir fried together with schezwan sauce which is then top with fried noodles and Schezwan gravy before serving.
The word triple in tripe rice stand for using three main ingredients which includes rice, noodles and gravy. Triple rice can be prepared both as veg and non veg variations. In vegetarian version of triple rice, veg manchurian balls are used in the gravy.

Triple Schezwan Fried Rice with Chicken Gravy & Omelet
A street-style Indo-Chinese delight made with Schezwan rice, fried noodles, spicy chicken gravy, and a fluffy omelet – all in one wholesome plate!
Ingredients
- For Schezwan Rice: 1 cup cooked rice, 1 cup noodles, 1 tbsp schezwan sauce, pinch salt, chopped spring onions
- For Chicken Schezwan Gravy: 150g boneless chicken, 1/2 tsp chopped garlic, 1/2 tsp chopped ginger, 2 tbsp chopped onion, onion & bell pepper cubes, 1 tsp red chilli sauce, 1 tsp red chilli paste, 1 tsp schezwan sauce, 1/3 tsp pepper powder, salt, spring onions, 1/2 cup water
- Other Ingredients: 1/2 cup fried noodles, 2 eggs, pinch pepper powder, salt, some boiled chicken
Instructions
- Cooking Rice & Noodles: Boil basmati rice till 90% done, cool completely. Boil noodles, drain, apply oil, and let cool.
- Frying Noodles: Dust cooled noodles with cornflour, deep fry till crisp golden, drain on paper.
- Marinate & Fry Chicken: Marinate chicken with chilli sauce, salt, pepper, corn flour, flour, egg. Fry till crisp golden.
- Make Schezwan Rice: Heat oil, scramble egg, add boiled chicken, rice, noodles, and schezwan sauce. Season with salt & pepper. Toss well and top with spring onions.
- Make Schezwan Gravy: Heat oil, sauté ginger, garlic, onion, capsicum. Add sauces, water, and fried chicken. Simmer. Add cornflour slurry to thicken. Finish with spring onions.
- Omelet: Beat eggs with salt & pepper, cook well done on both sides.
- Assemble & Serve: Plate schezwan rice, top with fried noodles, spoon schezwan chicken gravy, and place omelet on the side. Serve hot!
