Mushroom duplex is also known as mushroom double decker. Because two mushroom are joined together to make like a decker. Mushroom is also known as khumb in Hindi in India. So in some places it is called as bharwan khumb. It is very popular due to it's rich healthy nutritions.

Steps to make the recipe
First take the Spinach(palak) and chopped them roughly. Wash and clean them properly. Make sure there is no dirt in the spinach.
Take a non stick Pan or kadai, add 1/2 tablespoon oil and heat in medium flame. When the oil become hot add the Spinach and cook for few minutes till the excess water from spinach get evaporated.
After that add the Chilly flakes, Oregano, salt and pepper. Stir for 1 minute and remove and transfer the spinach in a mixing bowl. Let them cool down completely.
The stuffing filling for mushroom Duplex is ready now. You can even use different chopped vegetables like carrot, beans and bell peppers instead of palak for the stuffing.

Making Mushroom duplex
Clean the mushrooms under running water and pat them dry. Slowly twist off the stems from all mushrooms. Using a small table teaspoon or with the tip of a knife make a whole into the mushrooms from where the stem was removed. So that more fillings can accommodate into the whole.Now fill all the mushrooms with the above ready spinach mixture.

Dip the joined mushrooms into the beaten egg or corn flour batter and coat with the bread crumbs .If you don't like eggs then dip them into corn starch and all purpose flour mixture.Coat them nicely from all sides with the bread crumbs .

- Small pinch oregano
- Small pinch black pepper
- 1 egg (or corn flour slurry)
- 3 tsp corn flour
- 1 tsp all-purpose flour (maida)
- 1 cup bread crumbs
- Salt as per taste
- 2 tsp cooking oil (for sautéing)
- Oil for deep frying
Instructions
- Sauté spinach in 1/2 tsp oil until moisture evaporates. Add chilli flakes, oregano, pepper, and salt. Cool down.
- Mix the spinach with mozzarella cheese to prepare stuffing.
