Today I are going to share a very simple and popular recipe using curry leaves. It is called curry leaves fried Chicken. You can easily make this recipe at your home and impressed your guests.
It is a quick recipe and you can prepare and serve it within 15 - 20 minutes. Chicken breast pieces are used to make this recipe which are sliced into strips and then marinated and deep fried till crisp golden.

Yields :- 1 servings
Ingredients :-
* 1 Chicken breast.
* 7-8 Curry leaves.
* 1/2 teaspoon Red Chilly Paste (for colouring)
* 1/2 teaspoon Ginger Garlic paste.
* 1/2 teaspoon red chilli powder.
* 1 teaspoon Gram flour ( Chickpea flour also known as Besan).
* 1/2 teaspoon Corn starch (flour).
* 1 teaspoon beaten egg.
* 1/2 teaspoon Lemon juice.
* Salt as per taste.
* Cooking oil for deep frying.

Step by step method to make curry leaves fried chicken :-
* Take the chicken breast and cut into thin finger size slices about two inch long. Add salt, lemon juice and chilli powder and mix well. Let it to marinate for 10 minutes. Lemon juice is good tenderizing agent and it will make our chicken pieces tender and juicy.![]() |

* Wash the curry leaves, Pat dry and deep fry them till crisp. Let them cool down.

* Make a powder with the fried curry leaves or crushed them in between the palm of hands.
* Better to use the crushed curry leaves as it gives a nice visible looks when fried with the chicken pieces.
* Take a mixing bowl, add red chilly paste, ginger garlic paste, gram flour, corn starch and salt and mix very well. Add the beaten egg into the mixture.
* Note that the gram flour doesn't form any lumps in the mixture. If there is any lumbs, mix well till the they are vanished.
* Add the crushed curry leaves and remaining lemon juice into the mixture.

* Now add the chicken pieces into the mixture and mix well. Let it marinate for 15 minutes to a absorb all the flavors.

* Heat oil in a deep skillet pan and deep fry the chicken fingers till crisp golden in slow flame.
* Garnish and serve hot the fried chicken with curry leaves. Enjoy the distinct flavor and aroma of curry leaves in the crisp chicken pieces.

* Curry leaves fried is can be served with Cilantro mint sauce ( green chutney) and onion slices.
* It is generally served and used as a starter or appetizer ( snacks) . Some fresh green salad is a good side dish with this.

Recipe notes
* It is good to marinate for more at least 2 hours to make it juicy.
* You can soak the chicken pieces into butter milk as for a soft and juicy result.
* Don't over fry otherwise they would become hard and dry.
