In this recipe, I’ll show you how to make authentic restaurant-style Italian white sauce pasta from scratch with step by step  guide using the classic ratio of butter, flour, and milk. I’ll also share variations like vegetable pasta, chicken pasta, Alfredo pasta, and quick white sauce pasta, so you can recreate your favorite style at home.

It is the easiest pasta recipe that you can make with butter, flour and milk, which are readily available in your kitchen.

 Steps to make the recipe 

 Boiling pasta

Take a medium large pot,add water and little salt. Bring it to boil. When the water start to boil, add the pasta and cook for 6-7 minutes till it get cooked. I have taken penne pasta for this recipe, you can use any other variety of pasta like speghetti or macaroni.

Stain the pasta using a strainer and quickly cool down under running water. Otherwise the cooking process of the pasta will continue and our pasta will become soggy. Mix 1/2 teaspoon of cooking oil with the pastas to prevent them getting stuck with each other.

Prepare the White Sauce ( bechamel )

To make the bechamel sauce follow a standard Chef's ratio for butter, flour and milk.

The ration is 1 : 1 : 10.

Where   1 = Butter
               1 = Flour
            10 = Milk

I have taken 100 gm butter, 100 gm flour and 1000 ml Milk to make the bechamel sauce. 

First take a non stick pan and melt butter in low flame heat. Add flour and stir continuously for 1 minute till the flour smell goes off.

Don't over cook or brown the flour mixture, keep it white in color.  Remove the flour mixture from the pan and keep aside in bowl to cool down. This mixture is called Roux.

Next make studded onion using bay leaf and cloves ( optional  but authentic touch).

Take a pod and heat milk with the studded onion . When the milk start to boil , switch off the flame.

Add the above prepared Roux into the milk slowly and stir continuously with a whisk till a smooth  paste is formed. Don't let to form any lumps in the milk.

Strain the sauce using a conical strainer and keep aside in a container or bowl. Add some crush nutmeg powder in the sauce.

Top the sauce with some melted. It will prevent to form layer on the top of the sauce.

Making pasta  

Now heat olive oil in a non stick pan and saute garlic till light brown. Add vegetables if using and stir for a minute.

Add salt , black pepper powder and oregano to the pasta. Check the seasoning.

Serve the pasta

Remove the pasta in a plate and garnish with black olive and basil leave. Topped the pasta with grated parmesan cheese and sprinkle some fresh chopped parsley.  Serve hot with garlic bread.

  1. Creamy white sauce pasta : Add some fresh cream after salt, pepper and herbs to the above pasta  and make it as Creamy pasta.
  2. Alfredo Pasta : Add grated processed cheese in the sauce while making white sauce. Generally we serve a pasta  with grated Parmesan cheese to top the pasta.
  3. White sauce pasta with vegetable: Add some exotic vegetables like mushroom, broccoli and bell peppers  and corn.  Zucchini also add a nice flavors to the pasta.

4. Chicken White sauce pasta 

Cut chicken breast into small cubes and boil  in water, adding small pinch of salt.

White sauce ( bechamel sauce) is a creamy sauce made with butter, flour and milk. Boiled pasta are simmered with this sauce seasoning salt, pepper and herbs. You can add different vegetables and chicken pieces as well to make it more nutritious. Serve this with a garlic bread.

🥗 Ingredients

  • 1 cup Penne pasta ( or any pasta )
  •  4 cup water to boil pasta
  • 1/4 teaspoon salt
  • 100 gm butter
  • 100 gm all purpose flour (Maida)
  • 1000 ml milk
  • 1 medium size onion
  • 3 - 4 cloves
  • 1 - 2 Bay leaves.
  •  Small pinch of Nut meg powder
  • 1/3 teaspoon oregano
  • 1/4 teaspoon black pepper powder crushed
  • 1/2 teaspoon chopped garlic
  • 1/3 teaspoon olive oil
  •  Salt as per taste.
  •  1/3 teaspoon chopped parsley
  •  1/2 teaspoon grated Parmesan cheese
  •  1 black olive
  •  1 Basil leaves

  1. Take a medium large pot and boil 4 cup water with a small pinch of salt.
  2. When the water start to boil add the pasta and cook for 6 - 7 minutes. It should be in al dente texture.
  3. Stain the pasta and quickly cool down under running water. Mix 1/2 teaspoon oil with them to prevent getting stick to each other.
  4. To make a standard white sauce or bechamel sauce take butter, flour and milk in 1 : 1 : 10 ratio.
  5. Heat a pan and melt 100 gm butter in slow flame. Add 100 gm flour and stir continuously for 1 minute. Don't over cook or brown the flour. Keep it in white color.
  6. Remove it from the pan and let cool down. This mixture is called Roux.
  7. Make studded onion by piercing the cloves with bay leafs as shown below.
  8. Now heat 1 litre milk in a pod with the studded onion.
  9. When the milk start to boil switch off the gas flame.
  10. Now add the prepared Roux into the milk slowly and stir continuously with a whisk. Don't let to form any lump.
  11. Stain the sauce in a container and add the crushed Nut meg. Topped the sauce with melted butter to prevent to form any layer on the top of the sauce.
  12. Heat olive oil in a non stick pan and saute the chopped garlic till light brown. If using vegetables then add them and saute for 1 minute.
  13. Now add white sauce according to your needs and cook for 1 minute. Then add the boiled pasta and mix nicely with the sauce.
  14. Add salt, crush black pepper powder and oregano and stir the pasta for a minute. Remove the pasta in a serving plate and garnish with black olive and basil leaves.
  15. Topped the pasta with grated Parmesan cheese and sprinkle some chopped parsley.
  16. Serve penne in white sauce pasta with a garlic bread.
