Pasta is  traditionally a Italian dish and one of  world's most accessible food. Nearly every country has its own popular version of this inexpensive staple.

Pasta can be made using different types of Sauces. And white sauce is the most popular and prefer sauce to make a pasta at home.

It is the easiest pasta recipe that you can made  with butter, flour and milk, which are easily available in your kitchen.

A white sauce Pasta is  popular to kids as well for its creamy texture. You can add some vegetables  for the nutritions of your kids in white sauce pasta.





Pasta can be used as a light meal, you can prepare it for your children"s tiffin box as well.

White sauce ( bechamel sauce) is a creamy sauce made with butter, flour and milk. Boiled pasta are simmered with this sauce seasoning salt, pepper and herbs. You can add different vegetables and chicken pieces as well to make it more nutritious. Serve this with a garlic bread.

Preparation time :- 15 minutes

Cooking time :- 5 minutes

Total time :- 20 minutes

Ingredients :-

For pasta

   • 1 cup penne pasta ( or any pasta )

   • 4 cup water to boil pasta

   • 1/4 teaspoon salt

For white sauce 

   • 100 gm butter

   • 100 gm all purpose flour (Maida)

   • 1 litre milk

   • 1 medium size onion

   • 3 - 4  cloves

   • 1 - 2 Bay leaves.

   • Small pinch of Nut meg powder

For white sauce pasta

   • 1/3 teaspoon oregano

   • 1/4 teaspoon black pepper powder crush

   • 1/2 teaspoon chopped garlic

   • 1/3 teaspoon olive oil

   • Salt as per taste.

   To garnish the pasta

   • 1/3 teaspoon chopped parsley

   • 1/2 teaspoon grated Parmesan cheese

   • 1 black olive

   • 1 Basil leaves

   How to make the recipe

   Preparation

   1. Take a medium large pot and boil 4 cup
       water with a small pinch of salt.

   2. When the water start to boil add the
       pasta and cook for 6 - 7 minutes. It
       should be in al dente texture.
 
   3. Stain the pasta and quickly cool down
       under running water. Mix 1/2 teaspoon
       oil with them to prevent getting stick to
       each other.

   Making white sauce

   1. To make a standard white sauce or
        bechamel sauce take butter, flour and
        milk in 1 : 1 : 10 ratio.

   2. Heat a pan and melt 100 gm butter in
       slow flame. Add 100 gm flour and stir
       continuously for 1 minute. Don't over
       cook or brown the flour. Keep it in
       white color.

   3. Remove it from the pan and let cool
       down. This mixture is called Roux.

   4. Make studded onion by piercing the
       cloves with bay leafs as shown below.

   5. Now heat 1 litre milk in a pod with the
       studded onion.

   6. When the milk start to boil switch off
       the gas flame.

   7. Now add the prepared Roux into the
       milk slowly and stir continuously with
       a whisk. Don't let to form any lumbs.

   8. Stain the sauce in a container and add
       the crushed Nut meg. Topped the sauce
       with melted butter to prevent to form
       any layer on the top of the sauce.

   Making pasta in white sauce

   1. Heat olive oil in a non stick pan and
       saute the chopped garlic till light
       brown.

   2. If using vegetables then add them and
       saute for 1 minute.
 
   3. Now add white sauce according to your
       needs and cook for 1 minute. Then add
       the boiled pasta and mix nicely with
       the sauce.

   4. Add salt, crush black pepper powder
       and oregano and stir the pasta for a
       minute.

   5. Remove the pasta in a serving plate and
       garnish with black olive and basil
       leaves.

   6. Topped the pasta with grated Parmesan
        cheese and sprinkle some chopped
        parsley.

   7. Serve  penne in white sauce pasta with 
        a garlic bread.

                   RECIPE NOTES

• After boiling the pasta, it is important to cool them down immediately to restrict further cooking.

• If you want to make a creamy white sauce pasta then add fresh cream after adding the pasta.

• Don't use more then one herbs, oregano is good for a veg white sauce pasta recipe.

• Thyme is generally used in a non vegetarian pasta dishes with red sauce.

• You can store the white sauce for 2-3 days in a fridge for later use .

• You can skip to use the studded onion while making the white sauce. But to get the authentic Italian taste, it is necessary.

• In an authentic Italian white sauce pasta recipe, there is no use of chilly flakes in white sauce pasta.

• So it depends upon you to use it or not, after all we are preparing a white creamy pasta.

White sauce pasta with vegetable 

You can add different types of vegetables to this pasys recipe and make it more nutritional.

As our kids loves pasta  very much, we  are adding few nutritious vegetables that can boost their health.

I love to add some exotic vegetables like mushrooms, broccoli and bell peppers  and American corn.  Zucchini  also add a nice flavour to the pasta.

You can add carrot , french beans and green peas to make pasta more healthy.

1. Cut the vegetables into small pieces .But I prefer a diamond shaped vegetables in pasta as they look beautiful with penne pasta.

2. Boil water in a pod and blanch them with little salt. Don't over cook the vegetables either they will become meshy while cooking with pasta.

You can tossed these boiled vegetables in olive oil with salt , pepper and herbs for some extra flavour.

3. Take a pan, heat olive oil and saute garlic till raw smell goes off. Add the vegetables and saute for one minute.

4. Add the prepared  white sauce and mix. Saute for one more minute.

5. Then add black pepper powder, herbs like oregano and salt. And cooked them in slow flame. Add the boiled penne pasta in the sauce. Further cook for a minute.

6. If the white sauce become dry, add little milk .

7. Remove in a plate and garnish with chopped parsley and grated Parmesan cheese.

8. Serve white sauce vegetable pasta  with a garlic bread .

White sauce pasta with chicken

 You can make your pasta a complete full meal by adding boneless chicken pieces to it. Chicken can add more protein and nutritions to your pasta for a complete diet.

 To make white sauce chicken pasta, you need to boil chicken pieces.You can either use a leg boneless or chicken breast.

1. Cut the chicken breast into small cubes and boil them in water, adding small pinch of salt.

2. After sauteeing the garlic, add the chicken pieces and saute for one more minute.

3. Add the prepared white sauce and pasta and cook for one more minute.

4. Add salt, pepper and oregano and cook further.

5. Remove and serve hot with a garlic bread.

Preparation

1. Take a medium large pot,add water and little salt. Bring it to boil.

2. When the water start to boil, add the pasta and cook for 6-7 minutes till it get cooked.

3. Stain the pasta using a strainer and quickly cool  down under running water. Otherwise the cooking process of the pasta will continue and our pasta will become soggy.

4. Mix 1/2 teaspoon of cooking oil with the pastas to prevent them getting stuck with each other.

5. If you like prefer to add some vegetables in your pasta like broccoli, red yellow bell peppers, mushrooms and zucchini, then cut them and blanch in water.

  Making white sauce 

 The basic white sauce, also known as bechamel , is not only used in a variety of dishes but also the base for many other sauces.

To make standard bechamel or white sauce, we need to follow a  culinary standard ratio for butter , flour and milk.

* The ration is 1 : 1 : 10.

Where   1 = Butter
               1 = Flour
            10 = Milk

If you  take 1 gm butter for white sauce recipe  then you need to add 1 gm four and 10 gm milk.

You can increase it according to the ratio given above to make any amount of white sauce.

I have taken 100 gm butter, 100 gm flour and 1 litre Milk .

With white sauce you can make different types of pasta for your family and friends. Like adding proccessed cheese in white sauce ,you can make pasta Alfredo and using pesto in white sauce , you can make pasta al pesto .

 So you can make more white sauce  in a single preparation and refrigerate to use later.

1. First take a non stick pan and  melt  butter in low flame. Add the flour and stir continuously for 1 minute till the flour smell goes off.

2. Don't over cook or brown the flour mixture, keep it white in colour.  Remove from the pan and keep aside in bowl to cool down. This mixture is called Roux.

3. Next make studded onion using the bay leaf and cloves. This will make the sauce more flavourful.

4. Take a pod and heat the milk with the studded onion . When the milk start to boil , switch off the flame.

5. Add the above prepared Roux to the milk slowly and stir continuously with a whisk till a smooth thick  paste formed. Don't let to form any lumbs in the milk paste.

6. Strain the sauce using a conical strainer and keep aside in a container or bowl. Add crush nutmeg in the sauce.

7. Topped the sauce with melted  butter .
This is called butter bath. It will restrict to form any layer on the top of the sauce.

 This is the standard method for making white sauce recipe.

                 Making pasta in white sauce      

1.  Now heat olive oil in a non stick pan and saute garlic till light brown. Add vegetables if using and saute for one minute.

2. Add the prepared white sauce according to your need and saute for one more minute. Add the boiled pasta. Further saute it for 1/2 a minute.

3. Add salt , black pepper powder and oregano to the pasta. Check the seasoning, if required add more to the pasta.

4. Remove the pasta in a plate and garnish with black olive and basil leave.

5. Topped the pasta with grated parmesan cheese and sprinkle some fresh chopped parsley.
