Chilli chicken is a fusion recipe of Indo Chinese Cuisines which is spicy and little bit sour and sweet.  It is not that too much hot or spicy like the name suggest.

You can define it as batter coated deep fried chicken pieces are stir fried with different sauces and vegetables. Red chilly sauce, soya sauce are used to make it with other spices.
Chilli chicken recipe can be divided into two parts
  • Chilli chicken dry recipe and 
  • Chilli chicken gravy recipe
It is said that during the year of 1975 , Nelson Wang invented this famous chilli chicken recipe.
Chilli chicken recipe Indian style is served in most of the restaurants and hotels and  you can easily make this delicious dish at home without any great effort. Use little amount of red chilli powder and garam masala while marinating chicken pieces to give it a Indian flavour.

First cut chicken pieces into bite size shapes and marinate with salt, red chilly sauce, red chilly paste or green chili paste. Make a batter with corn flour, all purpose flour and beaten egg and add salt, chilli paste, green chilli paste, ginger garlic paste and coat the marinated chicken pieces. For a small quantity,  directly mix corn flour and all purpose flour with the marinated chicken pieces. After that cut capsicum and onion into cube size, chopped garlic, ginger, onion and spring onions. Keep ready dark soya sauce, vinegar, white pepper powder, chilly by your side.
Next fry the chicken pieces till crisp golden. Heat a wok or skillets and fry chopped ginger and garlic. Then add the chopped onions and fry till translucent. Add the capsicum and onion cubes and stir in high flame. Add water and simmer. Lower the flame, add fried chicken pieces and sauces. 
Then add white pepper powder, salt and corn flour slurry. Stir to incorporate everything. When sauces coat the chicken pieces nicely sprinkle some chopped spring onions and remove the chilli chicken.
For chicken chili gravy
Steps are same as chilli chicken dry recipe just need to more amount of water in the above steps. Adjust the salt and spices according to your taste. If the gravy is thin then add little more corn flour slurry.
Use white pepper powder instead of black pepper powder and green chili paste white making the gravy for chilli chicken.  Kashmiri red chilly paste is also used in restaurant style chicken chilly recipe to give it the glossy colour. Use boneless chicken leg pieces to make it. Use one cup full water for making the gravy. And to make it thick pour corn flour slurry slowly into the gravy.

In this recipe I have used red chilly paste for a nice glossy colour for the dish. You can use red chilli powder or paprika for that.

To make it at home first cut the chicken pieces into small bite size pieces and mix with salt pepper, chilli paste , corn flour, maida and beaten egg. Keep them marinated for sometime and then fry till crisp golden.

Another popular Indo Chinese dish called chicken Manchurian is now a days served like chilli chicken. Through these two have some differences but served as same as chilli chicken.
What is difference between Chilli chicken and chicken Manchurian?
Though both recipe uses the same sauces , in chilli chicken diced capsicum and onions are used which is absent in chicken Manchurian.

Another difference in between them  is the green chilli. In Manchurian chopped chilli is used whereas in chilli chicken slits green chili is used.
There are some more varieties of chilli chicken are served like green chili chicken , Andhra style chilli chicken and schezwan chilli chicken.
Andhra style chilli chicken
This is a popular chicken starter recipe in banglore. This andhra chilli chicken is also known as green chilli chicken. It is very spicy. 
Boneless chicken pieces are marinated with ginger garlic paste, red chilli powder, garam masala, lemon juice and  coarsely crushed onions. And cooked till tender with ghee. Then stir fry with cumin seeds, curry leaves, green chillies and with a green paste made with coriander leaves and green chili.
Tips to make chicken tender and juicy in chilli chicken recipe 
  • Marinate the chicken pieces for 1 - 2 hours.
  • Make a good coating while frying the chicken pieces in oil. Use beaten egg in coating. A good coating help to keep the chicken moist inside it.
  • Don't over cook it while frying otherwise it will become dry.
  • You can brine the chicken pieces for few hours to make it more tender and juicy.
Chilli chicken recipe without coating
You can make chilli chicken without coating with corn flour and maida. After marinating it with red chilly sauce, red chilly paste and salt, shallow fry them in a non stick pan with 1/2 teaspoon oil till crisp golden and tender from all sides. Remove and follow the remaining instructions to make it.
Chilli chicken with bone
Generally Chilli chicken is made with boneless chicken leg pieces or breast pieces but you can make it with bone in chicken pieces as well. 
Chilli chicken with bone are more taste. For this the chicken pieces should be cut into small bite size pieces with bone in. Follow all the given instructions as below just replacing the boneless chicken with bone in chicken.

Chicken chilli is a popular Indo Chinese recipe which is served both as dry and gravy. You can make restaurant style chilli chicken at home and serve with noodles and fried rice.

  •     250 g boneless chicken leg pieces
  •     1 teaspoon red chilly paste
  •     1 teaspoon red chilly sauce
  •     1 teaspoon dark soya sauce
  •     1/2 teaspoon rice vinegar (optional)
  •     1/2 teaspoon chopped garlic
  •     1/2 teaspoon chopped ginger
  •     1/2 cup chopped onion
  •     1 medium onion cut into dice
  •     1 green capsicum cut into dice
  •     1 green chili ( Slits)
  •     1/2 teaspoon green chilli paste ( optional)
  •     1/3 teaspoon White pepper powder
  •     1/2 cup corn starch ( flour)
  •     2 teaspoon all purpose flour ( Maida)
  •     1 beaten egg
  •     1/2 cup chopped spring onions
  •     Salt as per taste
  •     1 teaspoon cooking oil
  •     Oil for deep frying
How to make chilli chicken recipe
  1. First cut the chicken pieces into bite size pieces and mix with half of red chilli paste, red chilly sauce and little salt. Marinate for 10 minutes.
  2. Cut onion and capsicum into diced shaped size.
  3. Mix corn flour, all purpose flour and beaten egg with the marinated chicken pieces nicely to coat.
  4. Heat oil and deep fry them till crisp golden and remove in a tissue paper to absorb any excess oil.
  5. Make a slurry by mixing 1 teaspoon corn flour with half cup water.
Making chicken chilli dry (chilly Chicken dry)
  1.  Now heat 1/2 teaspoon oil in a wok or pan and fry the chopped garlic and ginger till light brown in high flame.
  2. Add the half of the chopped onions and fry till translucent.
  3. Add the diced.onion and capsicum and stir in high flame for 1 minute.
  4. Add the fried chicken pieces, red chilly sauce and red chilli paste and mix very well.
  5. Pour little water and mix everything well.
  6. Now pour 3 - 4 teaspoon corn flour slurry. Mix well and simmer.
  7. Mix the dark soya sauce, salt and white pepper powder.
  8. Check the seasoning and sprinkle some chopped spring onions.
  9. When all the sauces coat them evenly and the mixture become dry, remove and serve hot sprinkling some chopped spring onions.
Making chicken chilli gravy (chilly Chicken gravy)
  1. Add 1 cup water in step 5 above and simmer for 1 minute. Add salt and white pepper powder.
  2. Add dark soya sauce and 3 - 4 teaspoon corn flour slurry and simmer.
  3. The gravy start to thicken now, check the seasoning and the desired thickness of the gravy.
  4. Pour chopped spring onions and remove to serve immediately with noodles and fried rice.

                                Serving tips
• Chilli chicken dry is served as an appetizer or snacks. And whereas chilli chicken gravy is served as main dish
• Fried rice like egg fried rice, chicken fried rice are good options to serve along with chilli chicken
• Noodles is another good side dish for chili chicken.
                        Recipe note
• You can add schezwan sauce in the recipe to make it schezwan chilli chicken.
• Use of green chili paste is optional. It is used to increase the hotness of the dish.
• You can mix all the sauces in a cup and pour into the mixture at a time and stir fry with the chicken pieces.
• Take a cup and mix red chilli sauce , red chilly paste, vinegar , tomato sauce and dark soya sauce and mix well .  Add little water into it.After sauteeing the chicken pieces , add this sauces mixture with chicken pieces and coat well stir frying.
• Red Chilly Paste is used to give it the desired colour . You can use paprika or Kashmiri chilly powder as well in place of chilly paste.
•  You can make chilli chicken using with bone chicken also. Trust me it really taste well with with bone chicken.

Step by step method for Chilli chicken dry recipe

1. First cut the chicken pieces into bite size cubes about 1/2 inch long.
2. Take a mixing bowl and mix the chicken pieces with half of the red chilly paste, red chilly sauce  and a small pinch of salt. Mix well and let it marinate for 10 minutes.

3. In the meantime you can cut and chopped all your mise en plus. For chilli chicken , cut the onion and capsicum into dice shaped.

4. Now you can make a batter of corn flour and all purpose flour with water to coat the chicken pieces. If you are preparing large quantities of chilli chicken then it is better to make a batter to coat the chicken pieces. Otherwise for a small portion like this just follow the step below.
5. Directly add half of the corn flour and 2 teaspoon all purpose flour and a beaten egg with the chicken pieces and mix..

6. Heat oil in a deep vessel pan and deep fry the chicken pieces till crisp golden. Remove them in a tissue paper to absorb excess oil.

7. After that make a batter by mixing 1 teaspoon corn flour with 1/2 cup water and keep to use later.

8. In a wok or pan heat 1/2 teaspoon oil and saute the chopped garlic and ginger in high flame till light brown.
9. Add half of the chopped onions and further saute in high flame till onion become translucent.
10. Further add the diced shaped onion and capsicum and stir continuously in high flame for 1 minute.

11. Now  add the deep fried chicken pieces and stir and mix . Further add the remaining red chilly paste and red chilly sauce and mix well.

12. If you want to make it little more hot and spicy then add the green chilli paste.
13. Now pour little water and cook. Then pour 3 - 4 teaspoon  corn flour water into the chicken mixture and mix . Add salt and pepper and mix.
14. Further add the dark soya sauce and chopped spring onions .
15. Taste the seasoning and color of the chilli chicken. If required add more dark soya sauce to adjust the color. Remove when the the chicken mixture become dry and saucy in a plate . Topped with chopped spring onions and serve hot the easy chilli chicken.

For the gravy all the ingredients mentioned above are same as Chilli chicken gravy recipe.
Step by step method 
The method of preparation for chilli chicken gravy is also as same as Chilli chicken dry till water is added for gravy in chilli chicken gravy.

1.  Take a wok or deep vessel pan and heat 1 teaspoon oil and add the chopped ginger and garlic and saute in high flame till light golden.
2. Add  1 cup chopped onion and further saute till onions become translucent.
3. Further add the diced onions and capsicum and saute in high flame for 1 minute.
4. Now add the chicken pieces , red chilly paste, red chilly sauce and green chili paste. Stir everything to mix.
5. Pour one full cup water into the mixture and simmer for a while. Then add the salt pepper and spring onions into the gravy.

6. Let it simmer further and add 3 to 4 teaspoon corn flour slurry and dark soya sauce.

7. Adjust the color of the chilli chicken gravy  if necessary add little more dark soya sauce. Sprinkle some chopped spring onions and cook for a while till the gravy become little thicken.
 Remove them in a portion bowl and serve hot.
