Who doesn't love those crispy bites of fry chicken pieces with a soft and juicy texture from inside. Fry chicken has a distinct flavours that can not be resist to taste.

It is one of the easy and simple recipe that is hugely popular through out the world . There is no extra efforts need to make this super easy recipe at home.

This crispy chicken fry recipe is very popular in North Indian states and  particularly in Delhi. One of best selling evening snacks across the city streets.

Before starting to make fry chicken we need to understand some basic points to make a good crispy fry chicken which is soft and juicy from inside. Here are some points.




First point :- how do you make fry Chicken juicy?

When the word juicy comes , you need to put some extra efforts. You need a good proper marination process for your chicken to be juicy.

You need good natural tenderizing agent like lemon juice, yoghurt(curd) in your marination.

Go for two marination process, first with salt, lemon juice and ginger garlic paste. And marinated for at least 30 minutes.
And second one with yoghurt and other spices and leave it for overnight

When frying don't overcook the chicken pieces otherwise they will become dry.

There is another marination process used in southern City, a traditional method used to make chicken pieces juicy. They soak chicken pieces in buttermilk for overnight. These helps it tender and moist on inside and also help to coating stick to chicken pieces. These fried chicken are called southern fried chicken.

Second point :- what is fry chicken batter made of ?

Batter for fry chicken may differ from one place to another. But the basic ingredients need for a good batter are corn starch, flour, eggs with seasoning.

You can add different  seasoning into the batter like pepper, salt , herbs etc.

To make a batter take  1 cup corn starch, 1/2 cup all purpose flour, one egg and 1 cup water and mix well and seasoning with salt, pepper and herbs. If required add little bit more water.

I used gram flour(chickpea flour) instead of all purpose flour in this recipe with corn starch.

 Gram flour is a naturally gluten free and high in protein, minerals and vitamins. It contains Iron, fiber and antioxidants as well.

 It is good binding agents and work as a egg replacer in vegan cooking and in egg allergies.

You can make a batter for Fry Chicken with gram flour by adding 1 cup gram flour with 1/4 cup corn starch . Add ginger garlic paste, salt and other seasonings like chilli powder, ground cumin. Add 1/4 cup water or as required consistency of the batter.

Third point :- how do you know when the chicken is done frying?

The most simple method is to see if the chicken pieces start to float in cooking oil. If yes then it is done and cooked.

Crisp golden appearance is also a sign of done frying. You can insert a read thermometer into the thickest part and register 165°.

Fourth point :- Is it better to fry chicken covered or uncovered?

You should fry chicken uncovered when using deep frying method. If you covered it then steam won't pass and deposit moisture will fall in oil and make it pop and splatter. And cause a soggy texture chicken not a crisp one.

Fifth point :- why is my fry chicken is not crispy?

Reasons for not crisp fried chicken are

* Not using corn starch for coating the chicken pieces.

* Either fried in too hot oil or too cold oil.

* 250 gm chicken pieces ( with bone)

* 1/2 teaspoon ginger paste

* 1/2 teaspoon garlic paste

* 1 teaspoon black pepper powder (crushed)

* 1 teaspoon  red chilly paste ( for color)

* 1 teaspoon red chilli powder ( paprika)

* 1 teaspoon ground cumin( jeera)

* 1/2 teaspoon ground Coriander ( dhaniya powder)

* 1/2 teaspoon turmeric powder (haldi)

* 2 teaspoon lemon juice

* 3 teaspoon gram flour ( besan/ chickpea flour)

* 2 teaspoon corn flour

* 2 teaspoon yoghurt (curd)

* 1/2 salt or as per taste

* Cooking oil for deep frying.

Step by step method for fry chicken recipe

* Cut the chicken pieces into small bite size pieces. And wash them . Let the chicken pieces dry completely.

* Now marinate the chicken pieces with lemon juice, salt,ginger garlic paste  for 30 minutes. This is first marination process.

* Lemon juice is a good tenderizing agent and help to make the chicken pieces soft and juicy.

* After the marination time, mix red chilly powder, cumin powder, coriander powder , turmeric powder, salt, black pepper powder and red chilly paste with the chicken pieces. Due to the use red chilly paste ( Kashmiri red chilly paste) we get the distinct red colour for our fry chicken.

* Then add the yogurt, gram flour and corn flour with the chicken . Mix all ingredients properly to coat the chicken pieces evenly from all sides.

*Additionally you can mix fried curry leaves as well with them to give a distinct aromatic flavour.

* I personally love to mix some fried curry  leaves with them and they taste amazing .

* Now let the chicken pieces refrigerated for about 2-3 hours to absorb all the flavours.

* You can even fry the chicken after 30 minutes but for best results fry them after the said time.

* Now heat oil in a deep vessel pan or kadai in medium flame. When the oil become hot add the chicken pieces one by one into the oil.

* Keep the flame of the fire in slow flame and fry them till crisp golden for about 7- 8 minutes.

* You can observe that the chicken pieces slowly start to float . And that is a  sign that the chicken pieces are cooked .

* Don't overcooked them otherwise the chicken pieces would become dry.

* Remove them in a tissue paper to absorb the excess oil.

* Sprinkle some chat masala and lemon juice over them and serve hot the fry chicken.

* Chicken fry can be served with a plate of fresh green salad with cucumber, carrot , tomato and onions.

* Cilantro mint sauce ( chutney) is also served with a slice of lemon wedges .

* Some fries and wedges can also be served.

* A potato salad is also served with a fried chicken.

             Recipe notes

* You can mix curry leaves along with the batter to give it a distinct aromatic flavour. For that fry half cup of curry leaves in oil and mix with the batter.

* To make a spicy chicken fry add 1 teaspoon of green chili paste with all the ingredients when mixing.

* Boneless chicken and chicken breast pieces can easily be used to make it.

* For the best result you can marinate it in buttermilk for overnight along with some seasoning. The chicken pieces become more tender and juicy.

* You can use double breading method also to coat the chicken pieces to give it an extra crunchy texture.
