Chicken ghee roast recipe with step by step photos and video. This is one of the most popular recipe of Mangalore, perhaps you can say the pride of Mangalorian Cuisines is chicken ghee roast.
I am sharing the recipe of chicken ghee roast in restaurant style which you can easily make at your home . I have used chicken leg boneless as it get cooked quickly. You can use with bone chicken or chicken breast pieces  to make this recipe.
All you need to do is to marinate the chicken pieces with yoghurt, salt and chill powder for about 2 hours.
In this recipe Kashmiri chilly is used to give the red color to the chicken pieces and bedki chilly to make it spicy (hot).
Ghee roast masala
This is the masala used to cook the chicken pieces for the recipe. 
Ingredients for ghee roast masala
  • Kashmiri chilly whole
  • Bedki chilli whole
  • Small handful of curry leaves
  • Coriander seeds
  • Cumin seeds
  • Whole black pepper
  • Fennel seeds
  • Cloves
  • Garlic clove
Remove the stems from kashmiri and bedki chilli and dry roast them for two minutes. Remove and keep aside. 
In that same pan dry roast the coriander seeds, cumin seeds, black pepper, cloves and fennel seeds for one minute. Remove and mix them with roasted chillies. Add curry leaves and garlic cloves with them. 
Grind them into a fine paste using little water. This how you can make ghee roast masala.
In some typical Shetty kitchen's tandoori chicken is used to make chicken ghee roast. It taste much better as chicken pieces are marinated and roasted over tandoor and  then roasted with ghee and curry leaves.

Steps to make the recipe

1. Dry roast both the chilly whole and the whole spices separately on a kadai or pan in medium flame. Remove and let them cool down.
2. Then in a bowl mix the chilly whole with the dry spices and add garlic cloves and half of the curry leaves.

3. Now grind them into a fine paste using grinder or mixer adding water as required.
4. The paste shouldn't be too watery if it is  thick then it is ok .  This is our chicken ghee roast masala or paste .

5. Now take a pan and heat ghee in medium flame and add the garlic and saute for a while.
6. Then add the chopped onions and saute till translucent. Again add the remaining curry leaves and saute with  onion garlic till light brown.
7. Add the prepared ghee roast masala and cook for two minutes.

8. After that add the chicken pieces with the ghee roast masala. Mix well so that chicken pieces are well coated with the masala.

8. Pour water and salt and  cook the chicken pieces till done.

9. Now increase the heat of the flame and stir the chicken mixture continuously to dry up .  Pour the lemon juice over the chicken pieces and mix.
10. Remove and garnish with Cilantro leafs and serve the chicken ghee roast.

So how can you make chicken ghee roast like them at home ?
You can follow the below instructions for that :-
At home you can marinate the chicken pieces with curd ,  salt and Chilli powder for about 2 hours. Then roast them in a pan with ghee till 10 - 20 % done.  Then remove them and follow the step by step method given below .

The chicken ghee roast masala can be freezed  for more than 1month in a freezer. You can freeze the masala by portion wise in different container. So when you want to make chicken ghee roast , just bring out that specific portion and start to make it.

Chicken ghee roast is popular recipe where chicken pieces are cooked and roast with ghee and a  masala made by grinding whole chillies with spices.

  • 250 gm chicken leg boneless pieces
  • 50 gm kashmiri chilly whole
  • 30 gm  bedki chilly whole
  • 1 handful bunch of curry leaves
  • 3 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon black pepper whole
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon cloves
  • 10 - 15 garlic cloves(pods)
  • 1/2 cup chopped onion
  • 1 teaspoon chopped garlic
  • 2 teaspoon pure ghee
  • 1/2 teaspoon lemon juice
  • Chopped coriander for garnished
  • Salt as per taste
How to make the recipe
  1. Remove the stems from Kashmiri and bedki chilly and dry roast in a pan for 2 minutes in slow flame.
  2. Similarly dry roast the whole spices, cumin seeds, coriander seeds, fennel seeds, cloves and black pepper for 1 minute.
  3. Mix the whole spices with the chillies and add the garlic cloves and half of the curry leaves.
  4. Grind them into a fine paste using little water. Don't make the paste thin.

Making chicken ghee roast

  1. Heat 2 teaspoon ghee in a pan over medium flame and saute the chopped garlic.
  2. Add the chopped onions with the remaining curry leaves and fry till translucent.
  3. Now add prepared ghee roast masala and cook for 1 minute.
  4. Add the chicken pieces and mix well with the masala.
  5.  Pour one cup water and salt and cook the chicken pieces till done.
  6.  Increase the flame of the gas and continue stirring the masala to evaporate any excess water.
  7. Now it become glossy and masaledar, remove and serve hot topping with some coriander leaves.

                           SERVING TIPS
• Chicken ghee roast can be served with Neer Dosa. It goes well with Appam and plain steam rice as well.
• Generally it is served as an appetizer or stater along with some spiced Lachcha onion.
• A tandoori Naan is also a good option with chicken ghee roast.
                           RECIPE NOTE
• For less spicy(hot) you can avoid to use the betki Chilly in the recipe.
• Curry leaves is a must for the recipe as it gives the recipe its unique flavours. We can't think of chicken ghee roast recipe without curry leaves.
• For best results marinate the chicken pieces for about 2 hours.
