What is Chicken fried rice
Chicken Fried Rice is a classic Asian-inspired dish that brings together perfectly seasoned rice, tender pieces of chicken, and vibrant vegetables, all tossed in a hot wok for that signature smoky aroma. As a chef, I love this recipe for its balance of texture and flavor — the rice should be fluffy yet slightly crisp, the chicken juicy, and each bite layered with umami richness. It’s a versatile, satisfying dish that turns everyday ingredients into a restaurant-quality meal.
Rice for Chicken Fried Rice
The secret to perfect Chicken Fried Rice starts with the rice itself. Fried rice is traditionally made with leftover rice, as completely cooled grains give you that ideal, slightly firm texture. Freshly cooked rice tends to be too soft and sticky, so if you’re using it, spread it out to cool and refrigerate for at least 15 minutes before stir-frying.
For the best results, I prefer long-grain basmati rice — it stays separate and fluffy when cooked. Cook the rice until it’s about 90% done, then drain and spread it to cool completely. Adding a teaspoon of oil while boiling helps the grains stay distinct. You can also use regular white rice or any other variety, as long as it’s fully cooled before stir-frying. This same technique works beautifully for dishes like Chicken Triple Rice too.
