What is veg Seekh kabab
Veg Seekh kabab or vegetable seekh kabab is a cylindrical shaped kabab made by using different types of vegetables like beans, carrot, cauliflower and green peas. These vegetables are either finely chopped or minced and mixed with spices, flour and bread crumbs. Then placed in a shewer in cylindrical shaped and cooked.
Seekh Kebab are served with green chutney.
When we heard about the word seekh Kebab , we certainly sure it is a non vegetarian dish preferably a Mutton or a Chicken. Because seekh Kebab is a very popular dish around the  world and people are just love to have a bit of the juicy seekh Kebab.
Seekh Kebab has its root in the middle eastern countries and spread in country like India, Afganistan, Pakistan.
In India , Seekh Kebab is widely known in Lucknowi Cuisines and Punjabi Cuisines.
This vegetables Seekh Kebab is a modified version of Mutton or Chicken Seekh Kebab.

Vegetables Seekh kabab recipe 

Serving veg Seekh kabab pieces with onion slices

Finely chopped or minced vegetables are mix with boiled potatoes, corn flour, bread crumbs and seasoned with salt, cumin, green chili and chat masala. It is then shrewered and cooked till crisp golden.
Serve them with cilantro mint chutney.

Ingredients 
  •  100 gm French Beans
  •  50 gm Carrot
  •  50 gm Cauliflower
  •  50 gm Green Peas
  •  30 gm boiled Potatoes
  •  30 gm Paneer ( optional)
  •  1 teaspoon cumin powder
  •  3-4 green chillies
  •  Coriander leaves chopped
  •  Salt to taste
  •  1/2 teaspoon chat masala
  •  1/4 cup corn starch (flour)
  •  1/2 cup bread crumbs
How to make the recipe
  1. Finely chopped the french beans, carrot and cauliflower.
  2. Heat water in a pan and blanched them with green peas for 5 minutes.
  3. Remove and drain and let them cool down completely.
  4. You can take them in a kitchen towel and press to release any excess water.
  5. Grate the paneer and potato finely without leaving any big chunks.
  6. In a mixing bowl mix the vegetables  with grated paneer and potato.
  7. Add the corn flour, bread crumbs, salt, cumin powder, green chili, chat masala and chopped coriander leaves.
  8. Give them a good mix to form a nice  dough like mixture. The mixture should be little hard.
   Making the veg Seekh Kebab
  1. If using wooden sticks then soak them  in water for 30 minutes.
  2. Divide the vegetable dough into equal size balls and place over the shewer by  pressing gently to cover the shewer lengthwise.
  3. Keep your palm of hand wet while covering the shewer. This will help not to stick the vegetables on hand.
  4. Preheat Oven at 240°C for about  15 minutes and line a baking tray with aluminum foil.
  5. Place the shewer on the tray and grill for 15 minutes or till crisp golden.
  6. Remove them from Oven and then remove from the Shewer and cut into pieces and serve.
  7. Using tandoor : take iron shewer and place the vegetable ball over it by slowly pressing them to cover the shewer.
  8. Place the shewer inside a preheated  tandoor and cook for 7 - 8 minutes till  crisp golden.
  9. Remove the Shewer from tandoor and.  also remove the veg Seekh from the shewer carefully.
  10. Cut into pieces and serve.

                          Serving tips
•  Veg Seekh kabab are served as an appetizer with cilantro mint chutney or green chutney.
• Lachcha onion and lemon wedges are served as a side dish with them.
                          Recipe notes
• Use of paneer is optional. It can enhanced the taste of the veg Seekh Kebab. If you are making a Jain veg Seekh Kebab then use paneer in place of potato. Avoid using carrot also for Jain veg Seekh Kebab.
•  Corn flour bind all the mixture together. You can use rice flour instead of it as well.
 • While handling the Shewer use a kitchen towel.

Preparation

1. Finely chopped the French Beans,Carrot and Cauliflower . And mix with Green Peas.
2. Grated the Paneer and potatoes. Fine chopped the green chillies.
3. Heat water in a pan and boil the chopped vegetables with Green peas for 5 min till almost  80% cooked.
4.  Switch off the flame and let the vegetables cool down in a stainner leaving the excess water.
5. When cool down take a mixing bowl , add the vegetables with Green Peas and  mix the grated paneer and potatoes.
6. You can further minced the boiled vegetables using a knife on chopping board.
7. Now add the Corn flour and Bread Crumbs and mix well.
8. Add Cumin powder, salt , chat masala , green chillies and chopped Corriander leafs.

9. Mix properly  to give it a dough size texture.
10. Now shewer the vegetables mixture in a Shewer iron rod and  cook in a Ovalclay Tandoor for 5-7 min till it get crispy and golden in colour.

11. You can also cook the vegetables Seekh kebab in a oven . Preheat the oven and Shewer the mixture in a small size Shewer stick and cook for 8-10 min.

12. Also you can grill the vegetables seekh kebab on a non stick Tawa or on hot platter.
13. Cut the seekh kebab after removing from the shewer and serve hot with green chutney or Mint sauce with some ring
onions.
14. Sprinkle some chat masala and chopped Corriander leafs on top.
