And when we heard about Seekh Kebab, we certainly presume that it is a lamb or a chicken Seekh Kebab. But due to  immense popularity and demand, culinary experts has modified the Non vegetarian version of Seekh Kebab into a vegetarian version.

What is Paneer Seekh Kabab?

Paneer Seekh Kabab is a popular Indian appetizer made from paneer (Indian cottage cheese) mixed with spices, herbs, and sometimes vegetables, shaped onto skewers (seekh means skewer) and grilled or cooked in a tandoor (clay oven) or on a grill.

Typically a Seekh Kebab is made with minced or ground meat mix with spices. Then placed into a shewer or wooden stick into cylindrical shaped and grilled in a charcoal tandoor or on a BBQ grill.

Today we are preparing a vegetarian version of this popular Seekh Kebab replacing the meat with paneer. Paneer which is also known as Cottage Cheese is a very popular diary product in India. People of all age group love to eat paneer and in all especial occasions and events ,there is always a paneer dish in our country.

Steps to make the recipe

Preparation
1. Grate the Paneer and Potato  nicely without any big chunks. You can mashed them as well .

Potato is used to give the kabab the binding texture. You can avoid to use it.
2. In a mixing bowl , take the grated paneer and mix with chopped ginger, garlic, green chili, turmeric powder, garam masala, chat masala, jeera powder, and salt. Give a nice mix to make a dough alike.

3. Add  corn flour and mix well.  Corn flour will give it the crisp texture . Now add the bread crumbs and mix well. Bread crumbs will make the mixture dry by absorbing the excess water. This will also help the seekh kabab from not to break while arranging them in seekh or Shewer.

Making the Paneer seekh kabab

Divide the paneer mixture into equal parts and make round shaped balls.
By using Pan or tawa 
Take satay sticks or wooden sticks and with wet palm of your hand place a small balls of the mixture on the satay stick into cylindrical shaped. Press firmly from all sides of the mixture when placing on the stick. You can soaked the satay sticks for 15 minutes in water. This will prevent not to get burnt while cooking the Seekh Kebab on tawa.

Heat little oil in a non stick pan on slow flame heat. When become hot place the sticks on the tawa or pan and roast.  Rotate the sticks so that the kabab get well cooked from all sides. Roast them till they become crisp golden. When they become crisp golden remove from the pan and serve. You can remove the satay stick from the kebab and cut them into pieces and serve .

By using  tandoor 

You need long iron Shewer to cook the seekh kebab in tandoor. Lightly wet your one hand and firmly press the mixture to cover the shewer length wise.  After that put the Shewer in the tandoor and cook for 4-5 minutes .

By using Oven 

Procedure is almost same . You can either use wooden sticks or small iron shewer.
If using wooden sticks, make sure to soak them in water. Then arrange the mixture on them into cylindrical shaped.

Preheat an oven to 240°C for 15 minutes. Then place the shewer on a baking tray and put the tray in the oven. Bake them for 12 - 15 minutes or till crisp golden. Remove and cut into pieces and serve hot along with mint chutney or tomato sauce.

Paneer Seekh Kabab is a delicious Indian vegetarian appetizer made from spiced paneer (cottage cheese) mixture, shaped onto skewers, and grilled to perfection. It’s flavorful, soft, and perfect served with chutneys or dips.

Ingredients

• 150 gm Paneer ( cottage cheese)
• 1 boiled Potato ( optional)
• 1 teaspoon chopped ginger
• 1/2 teaspoon chopped garlic
• 1 teaspoon chopped green chillies (paste)
• 1/3 cup finely chopped coriander leaves
• 1 teaspoon cumin powder (jeera)
• 1/2 teaspoon garam masala powder
• 1 teaspoon chat masala
• 1/2 teaspoon turmeric powder ( haldi)
• 3 tablespoon corn flour
• 1/2 cup bread crumbs
• Salt as per required

Instructions

  1. Grate paneer and potato in a mixing bowl. Otherwise You can mash them very finely as well. Just make sure there is no lump present in the mixture.
  2. Add the cumin powder, garam masala, chat masala, salt, turmeric powder, coriander leaves and chopped green chili with them.  Mix them nicely and taste the seasoning.
  3. Now add the corn flour and bread crumbs and give everything a fine mix to make a dough like mixture. There shouldn't be any moisture present in the paneer mixture. You can increase the amount of bread crumbs for that if required.
  4. If using wooden sticks then soak them in water for 30 minutes.  Preheat the oven at 240°C  for 15 minutes and line a baking tray with aluminum foil. Divide the paneer mixture into equal size balls.
  5. Take a stick or shewer and place the paneer mixture to cover it cylindrically.  Use  wet palm and press lightly to cover the stick.  Now place all of them on the tray and bake or  grill them for 10 minutes or till crisp golden.

  1.  Heat little oil on a pan or tawa in slow flame and place the seekh on it.  Roast the seekh rotating from all sides till crisp golden. Remove  and repeat with the remaining seekh till done.
  2. Remove them from the stick or shewer and cut into pieces and serve hot with mint chutney.

Chef’s Tips

  • Use Fresh Paneer: Fresh, soft paneer works best. If store-bought paneer is too hard, soak it in warm water for 10-15 minutes to soften.
  • Make sure to squeeze out excess water from grated paneer. Too much moisture will make the mixture soggy and difficult to shape.
  • Grill or Cook on Medium Heat: If grilling, use medium heat to avoid burning the outside while the inside remains raw. Alternatively, cook in a preheated oven or tawa (griddle).
  • Shape Evenly on Skewers: Press the mixture firmly and evenly around the skewers to prevent it from falling apart while cooking.
