Aloo paratha is a dish from Indian subcontinent and is widely used in morning breakfast and lunch boxes. This paratha is a pride of Punjab. If it is aloo paratha then there will be a Punjabi connection with it.

What is aloo paratha? 

Aloo paratha is mainly a stuffed flat bread where outer layer is made using whole wheat flour ( atta) and the stuffing is made with spiced potato (aloo) mixture.

Boiled potatoes are finely grated or mashed and mixed with spices like chilli, salt, turmeric powder, cumin powder and other spices. This potato masala is then stuffed inside a wheat flour dough and then rolled and roasted with ghee till crisp golden brown.
These paratha are served with curd, raita, mixed pickles, tomato ketchup and butter(white makhan).

How to boil potato for aloo paratha 

It is easy to  boil potato in a pressure cooker. Just put the potatoes inside the cooker and add water so they are submerged in the water. Cook for 3 whistles on high flame.
Let the pressure go down by itself then open the lid and remove the potatoes and let them cool down to touch.  Peel and mashed or grate them.
If not using pressure cooker then take a deep vessel pod and place the potatoes. Add water so that the potato submerged in the water and cook for 30 minutes in medium flame.Check the potato using a fork or tooth pick

Reasons for breaking the paratha
  1. If you don't mashed the potatoes smoothly then there is a chance of breaking the paratha.
  2. If the used herbs like Cilantro,green chillies are not chopped finely then there is a chance of breaking the paratha while rolling.
  3. If the dough mixture is not knead properly then there is a chance for that.
To avoid breaking the paratha,  mashed the potatoes smoothly so that there is no big chunks in  mixture. 
It is better to grate the potatoes finely for the stuffing  instead of mashing.
Chopped the Cilantro, chilli and onion very finely to avoid breaking.
Dough play an important part while making a good and perfect aloo paratha. Knead the dough mixture 2 - 3 times  to achieve elasticity texture. Keep the dough mixture texture medium smooth.

Is aloo paratha healthy

Yes aloo paratha is healthy if we use whole wheat flour(atta) for making the dough.
 
Or use multi grain flour (atta). A aloo paratha without oil is healthy. Like a aloo paratha cooked in tandoor is healthy.

Otherwise you can make a tadka by frying the chopped onions with other ingredients and mix with the potatoes.
You can use any of the above mentioned method to make the stuffing. 

Aloo paratha without stuffing is another popular version where mashed potatoes with spices are kneaded with wheat flour (atta) to make a soft palpable dough. After making small round shaped balls, roll them and roast till crisp golden using ghee or oil.

Steps to make the recipe

Dough making 

Take a mixing bowl, add the wheat flour,salt and 1/2 teaspoon cooking oil and mix well
Now slowly add water and knead to form a medium smooth dough like chapati or roti dough.

Grease oil over the dough and keep covered to rest for 10 minutes to set.
 You can mix Carom seeds (ajwain) in the dough mixture as well, which is very useful for digestion.

Filling making

You can make two different types of fillings  or masala to stuff a aloo paratha.

For first filling, peel the boiled potatoes and mashed them in a mixing bowl. It is better to grate the potatoes to avoid big chunks which may cause breaking the paratha while rolling.
Add the chopped onions, chopped chilly, turmeric powder, cumin powder, chat masala, Cilantro leafs and salt . Mix very well. Taste the seasoning of the mixture. If required add more spices.

Stuffing mixture for aloo paratha recipe

Chat masala is sufficient for the Tangy flavour of the paratha . You don't need to add amchur powder or lemon juice. This is the most common recipe for aloo paratha masala.

Aloo onion paratha

The above aloo paratha masala is used to make aloo onion paratha as well. You can increase the amount of chopped onions and green chili for a good flavor. This aloo onion paratha can be served with curd, pickle and raita.

For second fillings, heat half teaspoon of oil in a non stick pan, add  chopped or slice onions and few curry leaves. Saute for one minute. Add the grated potatoes , chilly, turmeric powder, cumin powder,chat masala and salt. Mix them very well. Switch off the flame and remove the potato mixture in a bowl . Let the mixture cool down completely.

Rolling the paratha

Take the dough and divide into equal size and make round shaped balls.

 Similarly divide the potato mixture into equal size balls. Keep their size quite big as more stuffing make better and tasty aloo paratha.
Now take one dough ball and dip in flour and roll into 3 - 4 inch diameter using a roller pin and board.
Put one potato mixture ball on centre and gather the edges. Pinch them to centre and sealed properly.

Again dip it into the flour and roll into a 6 inch diameter paratha.

If there is a small breaking while rolling the paratha then don't worry . Just dust or place dry flour in that part and start to roll again. 

Roasting (cooking) the paratha

Heat a non stick pan or tawa in medium flame. When hot place the rolled paratha on it and cook for few seconds.

Flip the paratha , you can see some brown cooking spot on the paratha. Cook the other side for another few seconds.

Flip again and apply some oil on the surface of the paratha. Repeat with the other side of the paratha as well.
When the paratha become crisp golden on both sides remove from the pan in a serving plate and serve hot.
You can serve the paratha by  cutting into four pieces and garnished with tomato ketchup and mint Chutney.

Soft aloo paratha
How to make soft aloo paratha is a question often comes in our mind while making a alu paratha. There are some simple tips you can follow to make a soft aloo paratha
  • Use a palpable dough like chapati and it should be well kneaded for 2 - 3 times.
  • Keep the size of the dough ball(peda) small and stuff more aloo mixture.
  • Roast them in medium high flame heat. Use ghee or oil on both sides while roasting.
  • Try to roast the paratha well cooked under 2 minutes.

  • First well dusted the stuffed dough ball with flour. Press lightly with finger tips around the ball to spread. Then use a roller pin to expand it further.
  • If potato mixture come out while rolling the paratha from any parts then dust that part again with some flour and roll again.
  •  Use light hand and slowly roll the paratha to expand.

Can aloo paratha be made using Roti maker
You can make aloo paratha using a roti maker quite easily.
You need to make the paratha dough soft in texture. Fill the aloo mixture inside the dough like above shown in the video and dust with flour.
Press slowly to flatten in between your palm and place the dough over the roti maker.
Close and press the roti maker, you paratha will be ready.
You can apply butter or ghee and roast it on the roti maker.

Aloo paratha is a stuffed flat bread of Indian cuisine. Boiled mashed potatoes are spiced with masala and then stuffed into a wheat flour dough. Roast on a Tawa or pan with ghee till light brown and done.

Ingredients 
  •  1 cup whole wheat flour (atta)
  •  3 to 4 boiled potatoes (aloo)
  •  2 teaspoon chopped onion
  •  1/2 teaspoon chopped green chili
  •  1/3 teaspoon cumin(jeera powder)
  •  1/4 teaspoon turmeric powder ( haldi)
  •  1/4 teaspoon chat masala
  •  1/4 teaspoon salt, as per taste
  •  3 teaspoon coriander leaves
  •  2 teaspoon cooking oil or pure ghee
      How to make the recipe

Preparation
  1. Take whole wheat flour in a mixing bowl. Mix salt and 1 teaspoon oil.
  2. Pour water slowly to mix everything. knead to make a soft chapati like dough.
  3. Grease little oil and knead again. Cover and rest for 7 - 8 minutes.
  4. Peel the potatoes and grate then finely leaving no big chunks
  5. Now mix with chopped onions, chopped chilli, turmeric powder, cumin powder, chat masala, salt and coriander leaves.
  6. Take the dough and divide into small  round shaped balls.
  7. Similarly divide the potato mixture into equal parts.

Making the aloo paratha

  1. Take a dough ball and dust with flour. Roll it into  3 or 4 inch diameter using a rolling pin.
  2. Place the potato mixture on the centre and gather  the edges. Pinch them to the centre and seal properly.
  3. Dust the stuffed dough ball into the flour again.
  4. Now roll it into a 6 inch diameter size round roti.
  5. Roasting the aloo paratha :- heat a tawa or a non stick pan over medium flame and place the paratha on it.
  6. When small bubbles start to visible flip the paratha. Cook the other side as well.
  7. Apply ghee or oil on both sides while flipping the paratha and cook till light crisp and brown.
  8. Remove the paratha and serve hot with curd, chutney or raita .

•  In place of oil you can use ghee or butter while cooking the paratha .  For vegan aloo paratha recipe use only cooking oil. And if possible use a vegan butter for that.
•  You can make aloo paratha more nutritious by adding boiled and mashed vegetables like green peas, french beans, carrot and broccoli.
•  It is important to mashed the potato finely. You can use a potato masher for that. Grating is the best option for that.
•  If using seasoning potato mixture then cool it completely while stuffing. Otherwise the paratha may break.
• Chopped the onion , chilly and Cilantro finely .
