Here I bring you the step by step guide on how to make chicken kebab recipe at home.
 
Chicken kebab is one of the most loved  kebabs around the world.They are soft and juicy from inside and crisp from outside.
Kebabs are considered and treated as a healthy food because very little amount of oil is used to prepare them and they are not deep fried. And the kebabs are get cooked in their own juice over slow flame fire. Eat them with lots of vegetables and salads.


Kebabs are generally cooked over charcoal fire or open fire. BBQ grill is also a popular method used to cook them. You can get those amazing smokey flavours of kebab  by cooking them over fire.
Chicken is the most preferred  meat for making kebabs. But Lamb(mutton) , fish and even vegetables are used to make different types of kebabs.

This Chicken kebab recipe is made with cheese to give them more flavour. You can escape the cheese if you don't preferred it. I have used mozzarella cheese for this. Parmesan cheese is also a good choice.

Ingredients required for the kebab

Chicken : Use boneless chicken leg pieces. Cut them into small cube size. Chicken breast can be used but it become dry soon.

Yoghurt : Use a thick yogurt. Best to use overnight hung curd.

Cheese :  Shredded mozzarella cheese. Parmesan cheese also work fine.

Spice powder : red chilli powder, cumin powder and black pepper powder.

Vegetables : Onion, tomato, capsicum and bell peppers. Cut them into small cubes.

Herbs : Fresh ginger and garlic.

Lemon : 1 1/2 teaspoon lemon juice

Oil : Olive oil or any good brand's vegetable oil.

Salt : according to taste.

What to serve with the kebab

Chicken kebab with chutney is the best choice to serve. Green chutney made from fresh coriander and mint leaves is always served with kebabs.

Slice of onion, lemon wedges are often serve along with chicken kebab. Tandoori butter naan, green salad are good to serve.

Steps to make the recipe

Marination

1. Take the chicken pieces in a mixing bowl and add the lemon juice, ginger garlic paste,  Greek yogurt, red chilli powder, cumin powder, black pepper powder and salt. Give everything a good mix.

Make sure the chicken pieces coat well from all sides.
2. Similarly pour half of the mozzarella cheese into the mixture and mix well.

3. Cover and  Refrigerate the chicken mixture for over night or at least for 3 hour to absorb all the flavours.
4. If using wooden sticks to shewer the chicken pieces then soak them in water for atleast 15 minutes. This will help from not getting burnt while baking them in oven.

5. Bring the marinated chicken out of the freezer and thread in shewer. While threading  use the vegetables cubes alternatively with the chicken pieces. And keep a minimum gap in between them. This will help to cook them properly from all sides.

6. Preheat the oven to 240 °C for at least 15 minutes. Line a baking tray with silver foil and place the shewer over it. Brush some butter or oil over the chicken pieces.
7. Now place the tray inside the oven and grill them for 7 - 8 minutes. After that bring the tray outside and brush oil or butter again.
8. Topped the chicken pieces with mozzarella cheese and place again inside the oven and grill for another 5 - 6 minutes.

9.The chicken kebabs now become crisp golden. Remove them and place in a garnished plate and serve hot.

How to make chicken kebab at home without oven

To make chicken kebab at home without oven either  use a tawa or a non stick pan.
You can use a heavy cast iron skillet tawa for best results.  Thread the marinated chicken pieces in satay sticks alternatively with the vegetables.

Then heat the tawa or non stick pan over medium flame with little oil and place the chicken sticks over it. Cook them for 3 - 4 minutes then flip and cook the other side for 2 - 3 minutes. Cook them rotating till crisp golden.

Before removing them you can sprinkle mozzarella cheese over them and cook till the cheese get melted and crisp.

You can use a BBQ grill to give them smoke directly over the gas stove.
And if don't want to thread them in sticks, directly place them over the Tawa and cook till all sides get crisp golden.

Tips for making chicken kebab/kabab
  •  It is good to use chicken leg pieces instead of chicken breasts. Leg pieces get cooked quickly and don't get dry as compare to breast pieces.
  • Marinating with yoghurt is important. Yoghurt work as a tendariser and makes chicken juicy and soft.
  •  It is best to marinate them for overnight or for at least 3 - 4 hours for a better results. The more you keep them marinated, the more flavours you get from them.
  • If using wooden sticks then soak them for 15 minutes.
  • Keep a minimum gap between the chicken pieces while lining or threading in Shewer. This helps to cook the chicken pieces from all sides.

Chicken kabab recipe with mozzarella cheese is delicious crisp and juicy. This is a keto friendly chicken kebab made by marinating chicken pieces with ginger garlic, yogurt, lemon juice and other spices. Serve this Chicken kebab with cilantro mint sauce( green chutney), lemon wedges and onion slices.

Ingredients 
  • 250 g boneless skinless chicken legs or breasts cut into cubes
  • 3 teaspoon greek yogurt or hung curd
  • 2 teaspoon red chilli powder(paprika)
  • 1 teaspoon cumin powder ( jeera)
  • 1/2 teaspoon black pepper powder
  • 1 teaspoon ginger garlic paste
  • 11/2 teaspoon lemon juice
  • 1/2 cup mozzarella cheese(shredded)
  • 2 teaspoon oil (olive oil/cooking oil)
  • 1/2 teaspoon salt or as per taste
  • 3 teaspoon butter or oil for busting
  • 1/2 each of onion, tomato, capsicum and bell pepper cut into cubes and separated
   How to make the recipe 
  1. Marinate the chicken : in a mixing bowl mix the chicken pieces with ginger garlic paste, lemon juice, red chilli powder, black pepper powder, cumin powder, yoghurt, salt and olive oil.
  2. Mix everything evenly so that all the chicken pieces are coated well with the masala.
  3. Add half of the shredded mozzarella cheese and mix well with the chicken.
  4. Keep them refrigerated for overnight or at least 3 hours to marinate nicely and absorb all flavours.
   Making the chicken kabab
  1. If using wooden sticks then soak them in water for 30 minutes. This will help not getting burnt while cooking.
  2. Bring the marinated chicken out and start to thread them in a shewer one by one.
  3. You can thread onion and bell peppers cubes alternatively with the chicken pieces.
  4. Keep a minimum gap in between them them while threading them.
   Baking the chicken kabab
  1. Preheat a Oven at 240°C for 15 minutes. Line a baking tray with aluminum foil and place the Shewer over it.
  2. Brush some butter or oil over the chicken pieces and place inside the Oven and grill them for 7 - 8 minutes.
  3. After 8 minutes remove the tray and brush some butter over the chicken pieces.
  4. Now topped the chicken pieces with the remaining mozzarella cheese and place the tray again and bake for another 6 - 7 minutes to crisp golden.
  5. Remove and serve them hot with cilantro mint sauce or chutney.

  • Marination is important for a soft juicy and crisp kebab. So if possible keep them marinated for at least 3 hours.
  •  If you don't want to use yoghurt then brine them in butter milk for 3 hours. Drain and proceed further mixing with other spices.
  •  In place of ginger garlic paste use minced garlic and grated or ground ginger.
  •  You can use herbs like oregano or thyme in place of cumin powder.
