What is green chutney ?
Green chutney is a flavourful condiment of Indian cuisine made by using fresh leafs of coriander, mint and spinach along with garlic, ginger and green chili. It is little bit spicy and tangy in taste and serve as a side dish with most of the snacks and kebabs.

Ingredients required to make the chutney
Coriander leaves : use fresh and tender leaves.
Mint leaves : Fresh and tender leaves. Pluck the leaves and discard the hard stalks.
Spinach leaves fresh and greenish palak can give the chutney the bright green color.
Ginger, garlic and green chili
Yoghurt : less sour thick curd is best
Peanuts : use roasted peanuts otherwise you can use roasted chana dal as well. But peanuts gives more flavour to the chutney.
Spice powder : roasted cumin powder, chat masala, Rock salt and regular salt.

Steps to make the recipe
1. Washing and chopping
Cut all the roots from the coriander leaves. Remove hard stalks from them and chopped roughly.
Similarly remove all the hard stalks from mint and spinach leaves and roughly chopped them. You can keep the tender stalks from them to enhance the flavor of the chutney.
The stalks of mint leaves are generally hard so you can pluck them them for a smooth blending.
Now rinse them in water nicely so that no dirt remain. Drain them in a colander.
2. Blending the herbs
Peel the ginger root and roughly chopped. Similarly roughly chopped the green chilies as well.
Now Add the roughly chopped coriander, mint and spinach leaves in a blender or mixer jar. Then add the garlic cloves, ginger, green chillies and roasted peanuts.
Blend everything into a fine paste by using two to three tablespoon water. Make sure that the paste should not become watery. You can even use some ice cubes in place of water while blending them.
3. Making the chutney
After making the paste take a mixing bowl and add the paste along with yoghurt, roasted cumin powder, chat masala, rock salt, plain salt and lemon juice.
Now whisk together everything nicely so that the chutney become smooth. Taste the seasoning and if required add some more chilli and chat masala.

- 2 cup fresh coriander leaves
- 1 cup fresh mint leaves
- 1/2 cup fresh spinach leaves
- 1/4 cup curd
- 2 tablespoon roasted peanuts
- 3 to 4 garlic cloves
- 1/2 inch ginger root
- 2 green chili
- 2 lemon wedges for juice
- 1/2 teaspoon roasted cumin powder
- 1/4 teaspoon chat masala
- 1/4 teaspoon rock salt ( kala namak)
- Salt as per taste
- First cut the roots parts from the coriander leaves. Then roughly chopped them. Keep the tender stalks of the coriander.
- Similarly cut and remove the hard stalks from the mint and spinach leaves and roughly chopped them.
- Now rinse them in water for 2 to 3 times to remove any dirt present. Drain them well in a colander.
- After that place them in a blender or mixer jar. Add the garlic cloves, green chili, ginger and peanuts.
- Add 2 to 3 tablespoon water and blend everything into a fine thick paste. If required add some more water but don't make the paste watery.
- Now add the above paste in a mixing bowl and add the curd, roasted cumin powder, chat masala, rock salt, salt and lemon juice.
- Whisk everything together to make the chutney smooth. Adjust the salt and chilli as per your taste.
- Serve this green chutney with your favourite snacks like kebab, paneer tikka, pakora and sandwiches.
