Seekh Kebab is a very popular dish around the world . And when we heard about Seekh Kebab, we certainly presume that it is a lamb or a chicken Seekh Kebab. But due to  immense popularity and demand, culinary experts has modified the Non vegetarian version of Seekh Kebab into a vegetarian version.

Typically a Seekh Kebab is made with spices mixed with minced or ground meat , formed into cylinder on Shewers and grilled in a Ovalclay Tandoor or on a barbeque.

Today we are preparing a vegetarian version of this popular Seekh Kebab replacing the meat with paneer.

Paneer which is also known as Cottage Cheese is a very popular diary product in India.

People of all age group love to eat paneer and in all especial occasions and events ,there is always a paneer dish in our country.

           Paneer seekh kabab recipe

Paneer seekh kabab is made using grated paneer mixed with spices and thread in a shewer or wooden stick cylindrically to cover it. It is then bake or grill till crisp golden.

• 150 gm Paneer ( cottage cheese)

• 1 boiled Potato ( optional)

• 1 teaspoon chopped ginger

• 1/2 teaspoon chopped garlic

• 1/2 teaspoon chopped green chillies

• 2 teaspoon chopped coriander leaves

• 1/2 teaspoon cumin powder (jeera)

• 1/4 teaspoon garam masala powder

• 1 teaspoon chat masala

• 1/2 teaspoon turmeric powder ( haldi)

• 2 teaspoon corn flour

• 4 teaspoon bread crumbs

• Salt as per required

How to make the recipe

1. Grate paneer and potato in a mixing bowl. You can mash them as well.

2. Add the cumin powder, garam masala, chat masala, salt, turmeric powder, coriander leaves and chopped green chili with them.

3. Mix them nicely and taste the seasoning.

4. Now add the corn flour and bread crumbs and give everything a fine mix to make a dough like mixture.

5. There shouldn't be any moisture in the paneer mixture. You can increase the amount of bread crumbs for that.

Making paneer seekh kabab

1. If using wooden sticks then soak them in water for 30 minutes.

2. Preheat the oven at 240°C  for 15 minutes and line a baking tray with aluminum foil.

3. Divide the paneer mixture into equal size balls.

4. Take a stick or shewer and place the paneer mixture to cover it cylindrically.

5. Use  wet palm and press lightly to cover the stick.

6. Now place all of them on the tray and bake or grill them for 10 minutes or till crisp golden.

1. Heat little oil on a pan or tawa in slow flame and place the seekh on it.

2. Roast the seekh rotating from all sides till crisp golden.

3. Remove  and repeat with the remaining seekh till done.

4. Remove them from the stick or shewer and cut into pieces and serve hot with mint chutney.

• Paneer Seekh Kebab can be served with green chutney (Cilantro mint sauce)  and  Lachcha onion and lemon slice.

• It can also be served as a side dish with paneer curries like paneer butter masala, steam rice and roti .

1. Grate the Paneer and Potato. You can mashed them as well .

 Potato is used to give it a binding texture. You can avoid using it if you don't like Potato.
2. In a mixing bowl , take the grated Paneer and mix all the ingredients one by one except the corn flour and bread crumbs.

3. Mix well to give it a fine texture. Taste the seasoning .
4. Add the corn starch and mix well.  Corn flour will give itit t Crisp texture .
5. Now add the bread crumbs and mix well.
Bread crumbs will make the mixture dry absorbing the excess water. Thus it prevents from breakdown of the seekh kebab when shewering.
6. Now the mixture is ready to go.  You can cook it in the traditional way of cooking in an Ovalclay Tandoor or in an Oven.

Also you can use a non stick Pan to cook the paneer Seekh Kebab.

7.  Make small round shape ball of the mixture and start shewering.

1. Take satay stick or wooden sticks and using a wet palm of your hand Shewer the small balls of the mixture into the satay stick.
2. Press firmly on all sides of the mixture when shewering on the satay stick. You can presoaked the satay sticks for 15 minutes in water. This will help not to get burnt while cooking the Seekh Kebab on tawa.

3. Heat little oil in the Non stick Pan on slow flame. Put the satay stick on tawa or pan and roast well in all sides by flipping around.
4. When become crisp and golden remove from the pan and serve. You can remove the satay stick from the kebab and cut into pieces and serve .

Using Ovalclay Tandoor 

1. You need long iron Shewer to cook the seekh kebab in tandoor. Just wet your hands and firmly press the mixture to cover the shewer length wise.  Now put the Shewer in the tandoor and cook for 4-5 minutes .

Using Oven 

Procedure is almost same . You can either use wooden Shewer or small iron Shewer.
If using wooden Shewer, make sure to soak it in water first. Then shewer the mixture on it.

1. Preheat the oven to 240 degree and using a baking tray put the shewer of the mixture in it and cook for 7-9 minutes.
2. when it get Crisp and brown , bring it out and cut into pieces of your choice and serve hot along with Mint Chutney or tomato sauce.
